APRICOT LEMON CRANBERRY PECAN QUICK BREAD...whew...

I made a loaf of quick bread and I am here to tell you that it was
VERY GOOD.!

DEBBIE'S  is titled
LEMON BLUEBERRY QUICK BREAD
Her blog name...A SLICE OF PIE...
how cool is that !
Her recipe sounded so good...
and her photo,above, made it look even BETTER.
Thanks so much for this recipe, DEBBIE.
I made mine early in the morning so that when Mr. Sweet returned
from his errands, it would be just about ready to take out of the oven.
I am a firm believer on using what one has on hand..in the pantry or the fridge.
I had no BLUEBERRIES...:(
but I did have LEMONS
I did have a few cranberries...
I did have dried APRICOTS
and I did have PECANS  
sooo...
I mixed them all into the batter and could have eaten the
whole bowl of raw batter and fruit..
s-s-ss-so good, it made me stutter!
The name of the Quick bread changed to
LEMON APRICOT CRANBERRY PECAN QUICK BREAD
or
LACPQB for short  :O)
dayum....it was good. !
I fried a few strips of bacon to go on the side
and a little fresh lemon,
knowing full well that a little LEMON juice squeezed on the individual pieces
would just take it right over the top...
and IT DID !
I am fully aware that I have an OBSESSION with taking pictures of my food.
I keep asking myself...
do I like COOKING that much
or is it getting to take photos and playing with them in PHOTOSCAPE ?
Food is HARD to photograph...
well....SOME foods are hard to photograph.
Meat is one of them...
and casseroles ..
oh...and noodles...
you have to be very careful or they turn out looking...
well....
un -appetizing, 
to say the least.

I used DEBBIE'S recipe
replacing blueberries with the apricots and adding the nuts.
I can't wait to try it with BLUEBERRIES... 
The apricots made this bread so tender and moist..
It is much like a course cake and just delightful for breakfast,
warmed
dressed in BUTTAH.
This recipe goes in my TOP 50 BEST RECIPES  list .      
If you give it a try, let DEBBIE and I both know how you liked it.
NOW, if you will excuse me,
I am off to the kitchen to warm a slice of it and 
heat up the DUNKIN DONUTS coffee.

I just printed the recipe from Debbie's blog. Blueberry season here in Oregon so I can't wait to try this recipe. I have three young bushes in my backyard that are enough for cereal but not big enough yet to freeze for the winter. Hubby and I pick about 30 pounds a year and eat on them all winter long.

BJ - I'm thrilled that you loved it ... but more thrilled that you adjusted it to your own taste and supplies! That's the way to cook! Now I have to bake it with apricots, which I love with a little chocolate ... so might throw in a handful of choco chips! This recipes just keeps growing!

Non, I think you enjoy cooking way more. The icing on the cake, or Quick Bread in this case is the fun you have making photos and editing..........A mighty fine breakfast.........

'Uncle A.' loves me to make Quick Breads for him. Always on the look out for a new recipe. Or a new idea, on an old recipe.

As to your photo taking, I've said it before and I'll say it again... "When you grow up," you should get a job, doing this, for a big magazine! You know all about it, without any formal training, and it's simply marvelous!

I agree, some foods are so hard to take pictures of! I've made some dishes that is so delicious but yet when I've taken a picture of it, it looks like someone threw up! ICK! lol Needless to say, I don't use those pictures. :) xoxo

You are SO right about food being hard to photograph!!!!!!!!!! And I am clueless about "fixing" or changing pictures!!!! So, my food usually doesn't look so good. Sometimes I wonder if I should do any food posts at all..... This looks SOOOOOOOOOOOOOO good. XO, Pinky

Your photo's are always great. Girl I think you could make a raw Turkey Neck look good.
