~ Pretty Yellow Shadows you can eat ~

Hi, ya'll....
I hope your day is going as good as mine.
What a blessed and wonderful summer it is.

One of our good friends shared this beautiful
yellow squash with us ...
what a pretty golden yellow...
but more important, what a generous share from a friend.
Of course, the way we like it BEST is sliced, dipped in cornmeal mixture and
FRIED...
oh BABY...
but since we aren't eating much FRIED ANYthing,
Mr. Sweet is going to grill some for us tonight.. then, I'll slice the rest
and freeze.
No, we won't eat it fried...but ROASTED  is good, too..
....sliced, sprinkled with OLIVE OIL, a little light dose of SEA SALT and fresh ground PEPPER,
in the oven for about 20 minutes and you are GOOD TO GO.
The only thing better than getting fresh SQUASH 
is having a sweet FRIEND that is so loving and generous.

One of my favorite foods. Of course, I like it best fried too. Nothing better than fresh produce. Eat enough for me.

Yes, he is a hero!!! I loved our yellow squash from the garden this year. But we are about done with this heat. The garden is getting all fried up!!

Hi BJ: I'm with you and actually any kind of summer squash is so good no matter how you fix it. I love that you have Oscar Pistorius's picture on your blog. Just watched him anchor the last race. What a trooper and a very fast runner. There are so many wonderful stories about some of the athletes. Do you remember Jim McKay saying, "Up Close and Personal"? Those were good old days..Happy Weekend..Judy

Lovely squash - and a wonderful gift from a true friend. I go with grilling, just coating with a bit of oil before. Salt and pepper, and the fresh squash is now set for dinner. Yellow like the sun and with a side dish of shadows. Nice!

Oh- That is how I like my squash, too. Floured and fried! Yum....However, I have been just dry sauteing it in a non-stick pan lately and we love it that way now. It browns up and I just salt and pepper it- xo Diana

Your shadow shots are great, with the bright yellow color of the squash and the shadows too.
One of my favorite vegetables, so many ways to prepare it. I have a rice cooker/steamer that I use quite often to steam carrots, squash, zucchini, and onions together with a little red pepper flakes sprinkled on top... so good and healthy too. My daughter likes it boiled with a little butter added.

A sharing friend is indeed a blessing. I love summer squash, too. My favorite is grilled, but I also like it sauteed with onions and chicken broth.

I had to search all over the place for yellow squash yesterday....it is hard to find here in my neck of the woods for some reason and I was so craving some roasted peppers and squash...finally found some at Publix....good to have sharing neighbors!!!
