My recipe for the BEST homemade biscuits...FROM SCRATCH....
*
2 cups all purpose flour
2 Tablespoons baking powder
1 1/2 teaspoons salt
1/3 cup shortening
3/4 cup BUTTER MILK
(no buttermilk ?...just add a tablespoon (or cap full) of vinegar to regular milk (we called it SWEET MILK when I was a kid...every now and then, I say "sweet milk" and the grands look at me like I have
3 heads !!) ;>)
*****
The dough needs to be moist...not dry, so if you need to add a little more milk, by all means, DO.
I add enuf to make my dough VERY wet..having to add flour to my hands
to *work* it..
I usually add ONE FULL CUP buttermilk and sometimes, a little more.
THE SOFT SOFT DOUGH IS THE SECRET TO A REALLY GOOD, FLUFFY BISCUIT.

I like my biscuits baked in a CAST IRON SKILLET

STUFFED BISCUITS

Using canned LARGE biscuits such as GRANDS..

Roll or mash each biscuit out flatter and LAYER ON THE GOODIES.
I love bacon, ham, or sausage, topped with my favorite SHARP CHEDDAR cheese..
a little HOT SAUCE
There is NO RECIPE to this..
Just add the things you love and have on hand...the possibilities are endless, for sure.

I just roll them, put on greased cookie sheet, SEAM SIDE DOWN..
brush with melted butter...ummmm
and bake 400 or so until biscuits are nice and brown.
I think you will like these for a change at breakfast..
scramble some eggs, add a  little hot sauce
and
call me...I'll be right over....
especially if you fix me a cup of DUNKIN DONUTS coffee to go with it..
SOUTHERN CORNBREAD....
thin....crisp...buttery...NO SUGAR ADDED !!
**
Both Mr. Sweet and I grew up on this kind of cornbread...made in a cast iron skillet that's been seasoned well...
We like ours thinner than a lot of people because we both LOVE crispy !!
1 cup yellow cornmeal
1 cup flour
1 egg, beaten
a couple table spoons of melted shortening or bacon drippings, butter
1 tsp. salt
1 tsp. baking powder
enough milk to make a nice thick batter..
(I LOVE Buttermilk Cornbread so this is what I use)
***
Pour into HOT skillet that has a tad bit of shortening melted..
Cook at 425 for about 30 minutes...
We use a huge cast iron skillet so it will make the cornbread thinner...IF YOU LIKE YOURS THICKER, use a SMALLER skillet. It HAS to be CAST IRON, tho...
                                                                           .
IT'S THE LAW OF THE SOUTH !!
Even Rhett and Scarlet  ate this kind of SOUTHERN CORNBREAD, don'tchaknow...

Creamy Watermelon Pie

1 pkg. watermelon gelatin
1/4 c. boiling water
12-oz. frozen whipped topping, thawed
2 c. watermelon, seeded & cubed
1 graham cracker crust

In a large bowl, dissolve the gelatin in boiling water. Cool the mixture to room temperature. Whisk in the whipped topping and fold in the cubed watermelon. Spoon mixture into crust. Refrigerate for 2 hours or until set.

Made the easiest bread last night. Maple Beer Bread. It took five minutes to make. All I did was take 3 cups of flour, 2 TBS sugar and 1 TB of baking powder. Mix it with 1 12 ounce beer, 2 TBS Maple Syrup and a tsp of salt. Melt 2 tsp butter and put it on the bottom of the bread pan. Dump ingredients in the pan and top with 2 more tsps melted butter and put it in the oven for 50 minutes at 350 degrees. Easy and yummy. That's my sort of recipe.
