~ One Potato, Two Potato, Three Potato, FOUR

OOO, dear, what's for lunch...?
A search of the almost BARE fridge turned up a little less than
1 and 1/2 cups of mashed potatoes, left from last night's dinner.
By the time I added grated, sharp Cheddar cheese,
chopped up one ANAHEIM pepper,
a beaten egg,
salt and pepper to taste
and a generous shake of LOUISIANA HOT SAUCE,
and a couple handfuls of FLOUR,
I had almost half a bowl of the makings of those good, old fashioned
POTATO  PATTIES.
Now, as you might know, we don't DO many fried foods anymore...
Lordy, we used to fry EVERYthing....
now it is only a few things fried that we are more than SURE we would die without having
at least one of, every other month or so.
Surely that won't kill us.
We LOVE these peppers...
plenty of pepper taste without the HEAT.
As our MOUTHS age, we have noticed they don't care much for anything REALLY hot...
Fresh brocolee   brocklee , excuse me...I have to find a dictionary...
Be RIGHT BACK....

O, YEAH....
BROCCOLI......with Ranch Dressing
is the PERFECT green to go with POTATO PATTIES.
I really like it raw better than cooked...
same with carrots.
A super amazing lunch, AND......





....... we even have some left over to go with our bacon and eggs in the morning and that is going to be MIGHTY DELICIOUS.

All this from a little more than 1 cup of leftover mashed potatoes.

We don't do fried much either, but that is one dish that was always a favorite for my husband. We used to deliberately make extra mashed potatoes just to have some patties ready in the freezer.

Yours look just mouth watering.

Well that's a new recipe on me...I've never even heard of potato patties. Must try them one day. (I like all my veggies raw except for potatoes and corn...if one can call them veggies.)

My mom used to make these with leftover mashed potatoes, the morning after for breakfast! And I LOVED them! I can just taste yours through the screen! Looks so yummy! :)

Hi BJ,

Guess what... we had potatoes for dinner last night too. I had a bag that was starting to grow eyes and so I made potato skins (up-coming post) and a bowl of chunky mashed. We are trying to cut fat and calories too and they were so good. Enough for a breakfast-for-dinner meal this evening.

Your potato cakes look and sound delicious! Oh, yes!

Is that what they call turning a pig's ear into a silk purse? I have heard that but not sure of the exact meaning. I always assume it means turning something plain into something good. That might not be the meaning but that is what you did turning plain mashed spuds into beautiful, delicious looking potato cakes. I have eaten many in my time. They are good with finely chopped green onions cooked in them, too. I love your cheerful attitude, BJ! ------
