Please don't slap me....




 I just can't seem to get FINISHED  with
CUP CAKES and CUP CAKE wrappers.

Maybe it's the time of year...
ROMANCE is all around us in many different forms.....and ONE of the forms is
CUP CAKES.........
O YES....we ALL love 'em....! 

So, this morning when I got up and found a luscious WHITE CAKE MIX in my pantry, I thought about
WHITE CUPCAKES
and REAL FUDGE FROSTING.....
one of my favorite things in the whole, wide, entire world.
 ...and of COURSE I used some pretty wrappers on my 
CHILDHOOD LOVE AFFAIR 
with WHITE cake and FUDGE frosting....
No matter how hard I try, several of my cupcakes end up OVERFLOWING...
I suppose when you have lived as long as I, you have so so many memories.....tied into just about everything you do.





...girlfriends and I, thru the years, made this entire room full of CUPCAKES.....
I seldom look at a cupcake that I don't hear 
giggles and whispers....talks of the cutest boy in class....
the fact that HE asked ME to the party........

AND FUDGE.....O....FUDGE does indeed bring back so many memories. It is just amazing that my mind can flood with so many pictures, sounds, smells EVERY TIME I see or even think of
HOMEMADE FUDGE.

It can be in CANDY form....or ICING.
Even as a young child, I LOVED powdered cocoa and sugar, mixed together and eaten like......snuff, I guess. I loved the flavor then....still do. I nearly choked to death on the dry powdery stuff..:))

My favorite cake as a youngster was a white cake with fudge icing....my brother loved chocolate with white icing.

Fudge Frosting: (COOKS.COM)
2 c. sugar
1/2 c. cocoa
1/4 tsp. salt
1/2 c. milk
1/2 c. butter
1 tsp. vanilla extract
Combine first 3 ingredients in a heavy saucepan; stir in milk. Add butter; bring to a boil. Cover and cook over medium heat 2 minutes. Remove from heat and stir in vanilla. Beat at medium speed of an electric mixer until spreading consistency.Yields 2 1/4 cups.


Loving the fudge like I do, I HAD to frost a few of these delicious morsels with
CHOCOLATE......YES, MA'AM.....
The rest of the unfrosted ones went into the freezer.....
...to be taken out on the morning of the SUPER BOWL party, and frosted.

CHOCOLATE FUDGE goodness, fit for
KINGS AND QUEENS AND EVERYONE IN BETWEEN................
a CUTIE plate....from the Dollar Store, the best I remember..
this cupcake is a lot fancier than mine ended up being.
Let's face it.....I just don't do FANCY very well.
MINE look a little MESSY....
OK.....a LOT messy....all that thick, warm chocolate, spilling out into the plate...onto the 
pretty wrapper....
and 
INTO. MY. MOUTH
 Maybe I can "make them prettier" when I frost the ones I am 
taking to the SUPER BOWL PARTY for all my sweet friends to enjoy......I'll  try !!

Cupcake envy. Yesterday hubby and I passed a cupcake store (we have those here) and I asked if he wanted to stop. He said yes, but kept walking. Humph!

Hmmm, I do love a white cake with chocolate frosting... I have to use my cookie scoop for cupcakes or I have overflowing cups, too. But what's better...perfection or a lot of delicious cake?

I think the overflow of chocolate is just about perfect. I'll tell you a secret...shhhh.....the cupcake is just the carrier for the frosting. And if you have the canned frosting....you can dip into it, and have a bit of extra on your cupcake...but remember...that is our secret!!

I love that chocolate icing. I make a Texas sheet cake which has an icing you cook up on the stove (very similar to yours), then add powdered sugar and beat. Very yummy!
