so I've gone back in time for a favorite post.
It is ONE BIG PANCAKE,
cooked either in a regular, round CAKE pan
or, as I did,
in a cast iron skillet..
It rises...
then falls into
light and delicious ! ♥
They are thin...almost like a CREPE...
and you can add just ANYthing to them to make a really special treat.
I hear MAPLE SYRUP is a really good choice...
(Mr. Sweet's favorite ♣
I'm thinking
creme cheese and pecans, with a tiny bit of crushed PINEAPPLE..
*SIGH
Sweet cousins ♥gave us these pretty dishes, napkins, napkin rings
and I love using them.
The market, PINK flowers look so pretty with the dishes.
I have NO flowers this summer (8/11) so I have to
*get my flower fix* from the market..
Since CHERRIES are one of my very favorite fruits,
this is what I added. to our pancakes.
Sweet, yet tart and,
O SO DELICIOUS ♥
I buy the cans of TART CHERRIES (not the pie filling...never the pie filling)
add a tiny bit of sugar, a little flour and water...
gently boil for a few minutes...they will thicken a little.
I think the dishes look....DANISH..SWEDISH..
maybe even a little GERMAN..?
The delightful pancake looks good on the blue.
Sweet and spicy apples are good, rolled in the pancakes, so I've heard. ♣

1/4 cup butter
1 cup all-purpose flour
1 cup milk
6 eggs, lightly beaten
1/8 teaspoon salt
Preheat oven to 350 degrees. Melt butter in a medium baking dish. In a medium bowl, mix flour, milk, eggs and salt. Pour the mixture into the prepared baking dish. Bake on center rack in the preheated oven for 30 to 40 minutes, until golden brown
Then, add whatever fruit you like and sprinkles of delicious, white, fluffy POWDERED SUGAR ♥
NOTE..I used my large cast iron skillet to bake this and it worked beautifully.

WOW German pancakes. I have to ask my hubby if her ever had these. He grew up on his grandmothers German cooking. He still talks about it often. I never got to meet her and wish I had some of her recipes.

Well, I'm tickled PINK that you've gone back in time, since I missed this post the first go 'round. It looks YUMMY & although I've seen & heard about such big pancakes, I've never tried making one. I sure will now! I even have the lg. cast iron skillet to do it just like you did.
ReplyDeleteThanks for the tip about sweetening the tart cherries, too. I'll try that soon. I grew up with a yard surrounded by sour cherries & I have wonderful, fond memories of my Mom making pies & cobblers. NONE of them tasted like that canned pie filling stuff. Your idea may be closer to the real flavor.

ReplyDeleteBreakfast has always been my favorite meal. When growing up, we needed to make it through working in the fields. I still enjoy it everyday. I try to eat more healthy now, but biscuits and gravy, big slice of country ham, homemade preserves and coffee cannot be beat.
