Company's comin'.......

OK, time to fire up the ole oven again and make a couple of pies since our guests like sweets as much as we do! Gotta hurry...they will be here soon. Using the WONDERFUL Nilla Pie Crust is such a time-saver! I'm making another one of mine and hubby's favorite....COCONUT CREME.


Not sure if the cousins coming like Coconut so I made a Chocolate, too. EVERYONE loves Chocolate, right??


Ok...the pies are lookin' good. Oh, and this is a picture thru the pass-thru above my kitchen stove into the dining room. It is soooo handy. I've really enjoyed it. Opening up that space just made both kitchen and dining room seem larger. Plus it's really nice to be able to sit hot dishes on the tile and move them into the dining room.....



I've made a hugh pot of stew for dinner tonight, along with cornbread, onions and iced tea.


And, I just put together this breakfast casserole for morning. It is the most delicious thing you've ever eaten....well, we like it! I only make it when we have guests for breakfast so that it remains special for us, too. I like LOTS of black pepper in mine but won't add so much that the cousins won't like it....I can always add more to my serving!



Now, I'll cover it and put in the fridge. All the ingredients will have time to marry and it will taste so good in the morning, cooked fresh.....and all the work already done! You can't beat that!!


I'll have hot biscuits, apricot jam and a fresh fruit salad, along with hot coffee. Those cousins are gonna be soooo impressed!! hee, heeee (I think I'll tell them we eat this way all the time!!) :)


FARMER'S CASSEROLE

3 CUPS FROZEN, SHREDDED HASH BROWN POTATOES

1 CUP SHREDDED CHEDDAR CHEESE (I USE SHARP)

1 CUP DICED, FULLY COOKED HAM OR CANADIAN-STYLE BACON

1/2 CUP CHOPPED GREEN ONIONS

4 BEATEN EGGS

1 (12 OZ) CAN OF EVAPORATED MILK

SALT AND PEPPER

Grease a 2 qt. baking dish...arrange the potatoes evenly in the bottom, sprinkle with cheese, ham and green onions. In a medium bowl, combine eggs, milk, salt and pepper and pour over the potato mixture. Bake, uncovered in a 350 degrees oven for about 40 to 45 minutes or until center appears set. Let stand about 5 minutes before serving.

As I mentioned, you can put it all together the night before, refrigerate, get your oven warm the next morning and pop the casserole in. I sure hope cousins like casseroles!!

Move over girlfriend, I ain't waitin' on the cousins to arrive. LOL. I'm a gonna eat some of those pies and Breakfast Casserole now. LOL. It all looks yummy. I may have to try that Breakfast Casserole. "THANK YOU" for sharing the recipe with us. Oh my, that casserole looks scrumptious BJ! I may try that sometime, reminds me of a cheesy potatoe dinner casserole I've made that was to die for! That pie looks delicious too, but I don't bake pies, you'll have to invite me over!
