My post yesterday was all about WATERMELON and MEMORIES
and I told you about a
CREAMY WATERMELON PIE recipe I saw in THE COUNTRY DOOR catalog.
I couldn't wait to try it....
I made it today and may I just say...
O HONEY
So light and fluffy and......PINK.
It's one of those "get outa town" tastes...at least for me.
Watermelon just doesn't seem to "go" in a PIE but, it is pretty darn good.

If you like WATERMELON, you will absolutely LUV this pie.
Very easy to make...
I used a store-bought GRAHAM CRACKER CRUST and it was delicious.
Mr. Sweet especially likes WATERMELON so he is lovin' this pie.
Strawberries with Strawberry gelatin would be
OUT. OF. THIS. WORLD. good, too.

Creamy Watermelon Pie
1/4 c. boiling water
12-oz. frozen whipped topping, thawed
2 c. watermelon, seeded & cubed
1 graham cracker crust
In a large bowl, dissolve the gelatin in boiling water. Cool the mixture to room temperature. Whisk in the whipped topping and fold in the cubed watermelon. Spoon mixture into crust. Refrigerate for 2 hours or until set.

Bj, I am learning about different things that you can do with watermelon. Maybe that was what I should have told them I wanted for my birthday today at work. We had cake to go with our cheeseburgers and hotdogs. I watch a grilling contest and they grilled watermelon on the grill. I like pineapple that way. Have a great weekend. Your Missouri Friend

ReplyDeleteI have to say a pie didn't wound very nice at all, but I trust you... I may try, or just stick with it au naturel or in ice cream. But it does sound intriguing - and now I'm thinking cheesecake? Trifle?

ReplyDeleteI love watermelon, plus I like anything that is pink and fluffy looking so I would love it I'm sure. The husband doesn't like watermelon so much, though, so I would end up eating the whole pie myself.
