SWIG got its start in 2010 in Saint George, Utah. Owner and Founder Nicole Tanner was brainstorming with her husband one night about possible business ideas. He suggested a drive-by drink shop, something they both agreed could be successful. They opened their first location across the street from Dixie State University in April of 2010.
“We knew that there was a need for a good, fun drive-thru, and we knew that there were other people out there, like us, that enjoyed a good fountain drink,” says Tanner.
And the name? It was inspired by a single question when her husband simply asked, “can I have a swig of your drink?”
My understanding is that when you order a drink at SWIG,
you automatically get A SUGAR COOKIE.
...hence the name SWIG SUGAR COOKIES....(duh)

and she did such an amazing job of
MAKING them (recipe HERE) and PHOTOGRAPHING them
that she sent me
straight to the kitchen to try MY olden hand at them.
All of my family LUV sugar cookies so when my friend, VEE, sent me the link to
MANDIE's cookies, I rolled up my sleeves and rolled my eyes and went to work.
"Thanks, Vee....."
OK...the dough is very thick so you will want to be sure to
reach down and around the bottom of the bowl to be sure to get all
the ingredients mixed well.
As MANDI says "to get the signature edge" of this cookie,
you first place golf ball size balls of dough on parchment paper...
then using a glass bottom, dipped in sugar, press each cookie until the edges "ruffle".

ooo boy....this first batch came out great.
I could use more experience in making them a little THICKER so the edges
will ruffle in a very pretty way.

I only made 2 dozen today and I have
this nice-sized bowl of cookie dough
to go in my freezer...
O, how I LOVE cookie dough in my freezer...
We have so many recipes for SUGAR COOKIES...
they are all delicious...
THESE however seem to have a little more
going for them....
...maybe all that butter...!!//??
...some turned out thick....some thin....
which is great 'cause Mr. Sweet likes them really thick and soft...
I like 'em thin and crisp....well....I like them both, really.
I just like cookies...!!
I followed Mandi's recipe to the tee for the cookie dough
"THEY" say that you can't eat one of these SWIG COOKIES standing up..
.....your knees buckle with that first bite
and you'll fall flat on your face.

EXCEPT I added ALMOND FLAVORING
and a bit of MAPLE FLAVORING
as we all just LOOOOOVE MAPLE anything.
I will, however, try her PINK FROSTING when I bake up another batch or two.
* Since I froze some of the cookies without frosting,
I decided to make that pretty pink frosting that MANDI makes....
ok...mine here still aren't as thick and RUFFLY as hers...
so that means I must make these MANY times to get the hang of it.
