SAY WHAT..???.... a Good-For-Ya Muffin..?

 



Hello, everyone... 
 
I bought this  adorable white egg tray at
BIG LOTS
for $5....

normally $10 but 50% off 
made me smile...!!

Look how many deviled eggs it will hold....


Having most of my dishes packed....and looking for a nice big platter to serve these
STRAWBERRY OATMEAL MUFFINS,
I found out that this egg tray can show-off  my cookin' just fine...


...THESE are really tasty...and the kind of muffin that you can add  your favorite things.....or whatever you might have on hand at the time.

I made one pan of mini muffins and a couple pans of regular size......
some went into the freezer for awhile...with those fresh strawberries in the muffins, they surely will be good, in the mid of winter.

The minis are perfect for "on the go", along with that favorite cup of coffee....:)

 I have strawberries....oatmeal.....and pecans in these...
and they are goood......

HOWEVER...they weren't quite sweet enuf for moi....



















so I served them with low fat
STRAWBERRY CREAM CHEESE...

ahhhhh.....just perfect.






I added fresh squeezed 
lemon juice to one pan of the muffins...







and don'tchaknow they were delicious
served with a little 
LEMON CURD.

O HONEY

...that's the way I do it.....







This good recipe comes from WILL COOK FOR SMILES.

I tweaked the recipe a little...not much....
just added lemon juice to one pan full...
 pecans....
I used SUGAR SUB instead of real sugar...
oh, and cinnamon....

sooo...sugar sub...nuts...fresh fruit...oatmeal....
see....
I TOLD you they were good for you !! :)

  22. I'll have the lemon curd please! I was just thinking of making some muffins earlier today. The weather has cooled enough to consider baking again! We have some rhubarb in the garden that needs to be harvested:>)

  25. Where oh where did you get the deviled egg tray??? It's wonderful. The ones I have seen are always WAS too small.
    The little muffins look so scrumptious!! But then everything you ever make does!!

  26. The muffins sound so good. They wouldn't last long at my house. Hubby has a sweet tooth and I sometimes have to hide things so he won't eat them up too fast! I loved the idea of serving the muffins in an egg dish for breakfast.
