Ummmmm GOOD


Hey everyone....
Hope things are going good for you and yours.
Things are busy around SWEET NOTHINGS.....
getting ready for a MOVE "sure ain't  for SISSIES"...... !!! :)

Ya know how sometimes you prepare something in your kitchen
WITHOUT a real recipe...
using up some extra things that are in the fridge....?

Well, I had a lot of extra thin sliced HAM...
a half loaf of TEXAS TOAST BREAD that really needed to be used...
HENCE.....
the BEST breakfast casserole I have ever made....
Mr. Sweet says it was the best he had EVER eaten.
AWESOME !!

I started with cubed, crust removed, thick Texas Toast Bread  (NOT toasted)
added the chopped ham and CHEDDAR cheese
(I had sliced cheese so I just cut it in pieces and saved my 
SHREDDED EXTRA SHARP CHEDDAR for the top.)

6 eggs, salted and peppered....we LUV COURSE GROUND  black pepper....
about a 1/2 cup of milk....

adding FRESH, chopped mild HATCH peppers.

After adding the beaten eggs,

 I covered this baby with every bit of cheese I had on hand.

 THEN  CAME THE BACON
(if  EARL over at HAPPIER THAN A PIG IN MUD is reading this.....
i'm  sorry, man !!
i luv BACON

Into a 350 oven for about 25 minutes or until EGGS are set.
This was sooo good and I am pretty sure it was the
COARSE GROUND BLACK PEPPER
and
the fresh HATCH PEPPERS....

well.....and the HAM
O...... and the CHEESE
and, of COURSE, 
THE BACON...

BUT one of the best things is that I made enuf for Mr. Sweet and I  to have more for
tomorrow's breakfast !!!

It looks yummy to me! I love breakfast casserole. But just for the record, when I start mixing stuff up without a recipe, it rarely comes out delicious. Of course, what is really pathetic is that I eat it anyway.

I just happen to have some sliced ham in the fridge and the rest of the ingedients too, except the bacon. I am making this SOON!!!!!!!! When do you move???? How far???? I KNOW it ain't for sissies, I am still trying to get this house "put together"!!! XO, Pinky

I think it was the chiles that made this dish! It sounds just great. I'll be trying this soon. I have some frozen Hatch chile in the freezer waiting to be used!

Makes me laugh 'cause I always remember doing this, then our sons would say, "Man, MoM you out did yourself tonight. Can we have this again?" Problem was, I couldn't remember EXACTLY what I had thrown into the mix!!! Ha!

Yum. I love breakfast food...mostly for dinner as my husband leaves too early for me to want to get up and fix breakfast. He likes that quiet time alone with his book and coffee while I shower and get dressed...maybe retirement will change that, but I doubt it. I think most everything is better with bacon and cheese...yum!

Oh that looks good. I would do that for a breakfast for supper. Perfect for a cold January evening. Love cooking once and having two meals out of it. I am not familiar with Hatch peppers. Are they spicy hot? You always cook the best meals!

Looks so good bj and I am sure it is delicious. Love when I can make something for two or three meals at one time. That one would last us about four meals or more. Have not seen Hatch peppers. Will have to look. I think I have made something like that using frozen hash browns as the base. Also good. Thanks for sharing the recipe.

Oh I love when that happens...when you toss especially leftovers together and end up with something so delicious. Your meal looks so good. I would certainly have dropped in had I know. Good thing you wrote it down so you can do it again. I've done that before...not written and then just forgotten.
