A Spanish Treat


Rosa's Cafe is a Mexican food restaurant chain with beginnings in West Texas. (that's where I live. bj)
 Rosa's has now expanded to 30 locations across the state, including restaurants in Fort Worth, College Station and Killeen. There is even a restaurant in Temecula, California. The restaurants are popular and are well known in their vicinities for their "Taco Tuesday" promotions,and have increased locations even during the current economic recession.[3]

They are also FAMOUS for their awesome FLOUR TORTILLAS 
This is one of our favorite places to eat MEXICAN FOOD and we often
finish our meal with an order of their DELICIOUS SOPAPILLAS.

SOPAPILLAS.....

"A crisp, puffy, deep-fried pastry often served with honey or syrup."
One of my favorite things to eat.....
I have a recipe and have made them FROM SCRATCH
but I wanted to be sure and mention to you,
just in case you didn't know this well-kept secret..(LOL),
a very quick and easy way to come up with a delicious
TREAT....



I always buy the LARGE flour tortillas to use for burritos and I absolutely LUV them spread with butter and fried crispy. Ummmmm




BUT...you can cut them into 4 pieces and deep fry in oil
to make a basket full of delicious
SOPAPILLAS.

Since we don't eat many FRIED foods anymore, we have these
ONLY OCCASIONALLY.
(O, MY...we are such GOOOOD senior citizens...:)
 * Here's the dance.....
Heat oil until almost smokin'....it HAS to be H.O.T. to make
the tortillas PUFF.
(If your piece DOESN'T puff, your oil isn't hot enuf. )

Drop a 4th into the oil...hold the tortilla piece UNDER THE OIL with a spatula
until it PUFFS, turn over QUICKLY, browning the other side.
Drain on paper towel.
Since the oil is so hot, these babies brown VERY quickly so you
must work fast.

Some folks like to sprinkle
CINNAMON and SUGAR on them while they are hot...
...others, like MOI, love them with HONEY BUTTER.


Just mix your favorite margarine (or Brommel and Brown yogurt) with
honey .....

as simple as you can possibly get.
They are perfect after having an awesome Mexican food dinner...
the most delightful way to end your delicious meal.
Does it make them taste any better if you have a
beautiful, vintage, silver SPREADER to use...?
Probably not......
but I sure do love PRETTY.
The next time you are hungry for a quick, light dessert,
bring out your package of flour tortillas and
GO CRAZY...!!

  1. this is something completely new to me, we have NO Mexican restaurants here in this Northern Ontario Canadian town.Isn't that something, there is a taco bell across the border from us.

  2. Hi BJ! I just googled and we have a Rosa's 9 miles from us. We will definitely have to try it. Wonderful flour tortillas are my favorite!

    I just read Laurie's comment above. I just can't imagine not having mexican food nearby. :) Can you?

  7. I have never had these or anything like them, bj. I can't believe that those tortillas will puff...but I will believe you and try them. Do you eat them hot then? Are they decent when they are cold? xo Diana

  8. I did not know that' s how to make sopapillas. Will certainly try them. How's the pre-move going? Still can't believe you are moving to another house. It's actually pretty exciting but will take awhile to get used to another one. I feel at home here now and really love this place.

  13. Here, it's corn tortillas. I think I may turn-into-a-tortilla soon, I use them so much.

    Corn, because I have to eat Gluten Free. :-)

  20. Oh this makes me homesick for Casa Bonita in Tulsa where we would chow down on sopapillas and honey with butter. Yummo! Who knew that they could be this easy? (Gosh, I just Googled and learned that the restaurant went out of business last year. So sad.)
