Rosa's Cafe is a Mexican food restaurant chain with beginnings in West Texas. (that's where I live. bj)
Rosa's has now expanded to 30 locations across the state, including restaurants in Fort Worth, College Station and Killeen. There is even a restaurant in Temecula, California. The restaurants are popular and are well known in their vicinities for their "Taco Tuesday" promotions,and have increased locations even during the current economic recession.[3]

This is one of our favorite places to eat MEXICAN FOOD and we often
finish our meal with an order of their DELICIOUS SOPAPILLAS.

One of my favorite things to eat.....
I have a recipe and have made them FROM SCRATCH
but I wanted to be sure and mention to you,
just in case you didn't know this well-kept secret..(LOL),
a very quick and easy way to come up with a delicious
TREAT....
I always buy the LARGE flour tortillas to use for burritos and I absolutely LUV them spread with butter and fried crispy. Ummmmm
BUT...you can cut them into 4 pieces and deep fry in oil
to make a basket full of delicious
SOPAPILLAS.
Since we don't eat many FRIED foods anymore, we have these
ONLY OCCASIONALLY.
(O, MY...we are such GOOOOD senior citizens...:)
* Here's the dance.....
Heat oil until almost smokin'....it HAS to be H.O.T. to make
the tortillas PUFF.
(If your piece DOESN'T puff, your oil isn't hot enuf. )
Drop a 4th into the oil...hold the tortilla piece UNDER THE OIL with a spatula
until it PUFFS, turn over QUICKLY, browning the other side.
Drain on paper towel.
Since the oil is so hot, these babies brown VERY quickly so you
must work fast.

Does it make them taste any better if you have a
beautiful, vintage, silver SPREADER to use...?
Probably not......
but I sure do love PRETTY.

bring out your package of flour tortillas and
GO CRAZY...!!

this is something completely new to me, we have NO Mexican restaurants here in this Northern Ontario Canadian town.Isn't that something, there is a taco bell across the border from us.

I love sopapillas! My momma used to make them from scratch. We'd bite of one of the corners and then drizzle honey inside. MMmmm good!
