A fabulous FALL Casserole


HI, YA'LL
This awesome weather has me decorating and cooking to beat the band. I dearly LOVE a good casserole....especially in cooler weather. THIS is one of our family favorites and I thought YOU might like it, too....:)
It is truly one of our favorite COMFORT FOODS.
My little kids grew up loving this dish and to this day, when I make it,
it takes me right back to the kitchen when my two sweetie were sitting at the bar, just waiting for me to "get it on the table."
They both consider this good casserole as a warm and welcome COMFORT FOOD.

MEATY BAKED BEANS
This is not really a RECIPE, as such...it's one of those
add....and taste.....until you have it like you want it.
A great thing about this dish is that it's THRIFTY...I love thrifty meals, don't you?


Saute chopped onions, salted and peppered...
scramble LEAN hamburger meat until WELL done, in with the sauteed onions.
Once the meat is fully cooked, add a can of BEANS, your choice. We like
BUSH'S GRILLING BEANS, 
a little MAPLE SYRUP (about 1 Tablespoon..if your beans are sweet, maybe less..and, of course, ANY syrup will work), 
a little CHILI SAUCE (about 3 Tablespoons)*sometimes, I use Ketchup )
about a level Tablespoon MUSTARD
SALT and PEPPER to taste.
NOW...
this is a good time to TWEAK the dish in anyway you might like.
I taste as I go along...you may want to vary the amounts of ingredients but
this is a pretty good mix.
You can add hot sauce here if you like...or add chopped peppers to those
onions when you saute them....ANYTHING you like.
I pour mine into an oven proof dish and cover that baby with 
a nice BLANKET of EXTRA SHARP CHEDDAR.

....into a 350 oven until the cheese is all melty and gooey and sooo good-lookin'...
remember, everything is already cooked...

something pretty to look at ALWAYS makes your food taste twice as good.

open up a bottle of your favorite wine...O HONEY
Nearly all of us have a pumkin' or two around this time of year...
Man...let me tell ya that I have got a LOT of mileage out of these 3 little BOOS..

We LOVE creamy MASHED POTATOES with our MEATY BAKED BEANS.
...celery sticks and little tiny CHERRY TOMATOES
puts it all RIGHT OVER THE TOP....
'course, HOT, CRUSTY ROLLS would be amazing, too.
I've not had lunch yet and I am slobbering all over my key board.
I am sooo weak. :)
I think ya'll will like this dish and it's so easy and fast...sometimes, NOT ALWAYS, I will make TWO at a time and have one to FREEZE.... NOW THAT IS AN AWESOME THING....to have a good-tasting casserole all cooked and ready to go into the oven.
My mama did the same thing....did I get it from her...??....most likely. :)

I am home...and ran over as fast as my legs would run to see what you are up to...have you ever made one dish dinner....I really think most people call it Shepard's pie...my mom made it with hamburgar, peas, topped with mashed potatoes...your dish today kinda reminding me of it...hope you are well....talk to you again soon!

Looks great bj ... I will try it sometime, but like a big pot of stew, it would last us for several meals, but I could freeze left-overs.

I love Casseroles! Same way I love a Crock Pot meal. Both can be prepared ahead of time. Plus, you can put *everything but the kitchen sink* in them! :-)

Your casserole does look good! We serve Shepherd's Pie here quite a bit. It's a family favorite... similar ingredients without the beans, but with ground meat, onions, green pepper, garlic, parsley, etc. served in a pie shell and topped with herbed mashed potatoes.

BJ, that looks delicious, but of course I will eat ANYTHING involving baked beans.

(When we were kids, my oldest brother started taking leftover baked beans, and making "bean rollups" -- omelettes! -- with them. I still do that.)

I need a casserole or a one-dish for tonight's supper, as we're all going to be coming and going. hmm ... have I got some beans in the cupboard?

Your wee little pumpkins are adorable. I am awed by the variety of pumpkins available now. Amazing!
