Happy Mother's Day

He has lost 20 lbs and we are sooo happy.
He ( being MR. SWEET) was so pumped up when he came in from workout and had weighed.
He said, "Come on....let's go walk the mile around the park>"
and away we went....beneath very heavy skies and it 
did, indeed, sprinkle on us during that mile walk.
.....PURE BLISS
 We woke up to a cloudy, overcast, dark, 
LUSCIOUS DAY and that put me in the mood to BAKE.


Come on in and have a TREAT with me.

It has rained off and on, all day long...and I am
LOVIN'  it.

I feel better when it rains than any other time.
I love the cloudy, dark, SNUGLY days so much.
I think they are BEAUTIFUL. ...

and they ALWAYS make me want to bake....
and nap.....and eat.....:>)
 That's a recipe I just copied from SWEET TOOTH FRIDAY.
Oh, my.....she does come up with some really great things to devour.
PEANUT BUTTER and JELLY MUFFINS
whoa.....don't THOSE sound delicious !!

 
Ingredients
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat (or white whole wheat) flour
  • 1/4 cup granulated sugar( I used SPLENDA)
  • 1/4 cup packed light brown sugar ( I used SPLENDA BROWN SUGAR BLEND)
  • 1 tablespoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1-1/4 cups milk
  • 1/3 cup creamy peanut butter (I used the natural, no-stir kind)
  • 1 egg
  • 2 tablespoons butter, melted( I used only 1 Tablespoon)
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter chips (I didn't have these but they sure would have been good in this muffin)
  • 1/4 cup raspberry jam ( I used SIMPLY FRUIT)
Instructions
  1. Preheat the oven to 400 degrees. Spray 12 muffin cups with nonstick spray or line with muffin liners. Set aside.
  2. In a medium sized bowl stir together the flours, sugars, baking powder and salt. Set aside.
  3. In a small bowl whisk together the milk, peanut butter, egg, melted butter and vanilla extract. Whisk lightly, until the ingredients just come together.
  4. Pour the milk mixture into the flour mixture, stirring until just combined.
  5. Stir in the peanut butter chips.
  6. Fill each muffin cup 1/2 full.
  7. Spoon 1 teaspoon jam into each cup.( I used only 1/2 teaspoon...altho I actually wanted to use the whole stinkin' jar of APRICOT SIMPLY FRUIT....UMMMM
  8. Spoon the remaining batter on top of each cup.
  9. Bake for 18-20 minutes, or until the muffins are a golden brown and spring back when touch lightly.
  10. Cool 5 minutes in the pan, then remove to a wire rack to cool completely. 
They are very good....not too sweet....altho if you used a whole teaspoon of jelly in each muffin, I guess they would be really sweet....and delicious.

I didn't get enuf PEANUT BUTTER in mine since I didn't have the peanut butter chips....I think the muffins really NEED the extra peanut butter.....ACTUALLY, I think ANYthing needs
MORE PEANUT BUTTER, don't you?


 My goodness, all that sweet golden APRICOT goodness spilled out onto the muffin pan...if it had not been so hot, I would have LICKED THE PAN......:)

Mr. Sweet, bless his sugar-deprived heart, REALLY liked them.
He could have eaten so many more....
maybe ALL of these.
He is doing sooo good on watching what he is eating.
 ...don't you love MR. SNIPPITY here ?.......meee, too
 What a colorful post this turned out to be.

I am really enjoying all the colorful and pure cuteness of these little
cupcake cups.
I go to Michael's  regularly to replenish my stash.

 When I was a little girl, Mother made muffins and cupcakes regularly but I don't remember having such pretty cupcake wrappers.
Actually, I think she just poured the batter into a greased muffin tin.

I made cupcakes a lot when our kids were little but always just used the plain and simple little paper cups from the grocery store.
I didn't even KNOW there were pretty ones in the world.

I think PRESENTATION is as important as TASTE.
Well........NEARLY as important.

I love your cupcake cups! We don't have a Michael's, though, so I won't be buying any anytime soon. Maybe SOMEDAY we will really expand and get a few good stores?

I'm so proud of Mr. Sweet! He's doing great and I know he feels so good, too! I don't eat sugar so I know what a challenge it can be but this recipe looks good! How great that you can make things especially for him! Happy Mother's day, my friend!

How do you think either one of you can lose weight, when you keep doing that wonderful cooking. I am trying to get back to walking each day, but it is hard once you are of the habit. Stop tormenting the poor guy.

Good heavens..I swear, you are just a light in my life, bj! Such yummy things to eat and yet your Mr. Precious has lost all that weight. OH how I wish it were me. Congratulate him for me, will you..(and of course I needn't remind you he will know immediately who I am.) My husband loses weight so easily and has such disipline. I have NONE! NONE, I tell you!

Never mind all that...just have a wonderful, warm and cozy Mother's Day!

Yes rainy gloomy days do call for cookies and muffins and anything sweet. I don't see how Mr. Sweet loses any weight with all the goodies you fix. I did notice you used Splenda. I did not know about the Splenda brown sugar will go for that. Love the pretty cup cake papers.
