PEANUT BUTTER
3 INGREDIENT COOKIES....
We love 'em with a passion.
Mr. Sweet's cardiologist told him to
"LOSE WEIGHT, MAN."
So here we are, in the first week of PHASE 1 of
THE SOUTH BEACH DIET.
This phase is the hardest one as there is
Nothing white.....NO starches at all...
That means no bread, no sugar, no flour, no rice, no pasta.....
nuthin'.......notta.......zilch ...
for TWO SOLID WEEKS.
*I'm gettin' a headache....*
Some veggies, eggs, egg substitutes, chicken......
you know......all the things that we all know is good for us.
An egg most every morning is about to KILL me....
I don't like eggs....
Cold and hard boiled with a ton of black pepper goes down fairly well....but.....

In other words, if it taste GOOOD, spit it out.
Now THESE peanut butter, 3 ingredient cookies are made with SPLENDA.
(1 cup Peanut Butter
1 egg
1 cup Splenda.....
(make cookies small...then you can eat TWO )
We are allowed ONE TABLESPOON of peanut butter a day....
and I'll take mine in COOKIE FORM, if you please.

They surely don't stack up to THE REAL THING,
but when you have gone almost a week with NO sugar.....nothing sweet.....
SPLENDA becomes your best friend.....you learn to love it so much, you wanna marry it.
The texture is way different using a sugar sub....take one bite and they fall totally apart a lot more tender.
I am not used to the " after" taste of sugar subs but, I'll get there.
It is so much easier when the BOTH of us are doing this together.

right now.
PHASE 2 of this diet will let us eat multi grain breads, sugar/fat free Cool Whip
on our Sugar Free jello....and other goodies.
But.......2 weeks is a loooong time.....

I can't eat sugar so I find this a challenge, too! I gave a few suggestions in a post last week! I'll just tell you this as encouragement...your taste will change and it will be easier in a few weeks...believe me! You'll be great and feel SO much better!

The South Beach is easier than Atkins and if I could do Atkins, you and the Mister can handle this. I'm wishing you all the best! Go on Amazon and look for low carb cookbooks...I have a few!

I sprinkle eggs with nutmeg...LOVE IT! But then again I think I would sprinkle nutmeg on anything!!! Can you have fruit??? I also like some grated orange rind or lemon or even both on hard boiled eggs ALONG with grated pepper, YUMMMMM!!!
ReplyDeleteI did a somewhat ATKINS years ago BUT the only part of it I did was GIVE UP DESSERT of any kind!

Hang in there! Believe it or not, your taste will change and you won't miss the *good bad* stuff so much ... in fact, some of it won't taste good to you anymore! the cookies looks delicious!

ReplyDeleteWell, when you get to the whole grain stage, you can have a delicious Apple Cheese Danish made with a slice of whole grain toast, a slice of cheese and an apple sliced and sauteed with a small pat of butter a goodly amount of cinnamon and some Splenda. When the apple has cooked down, add it to the bread and cheese and pop it into the broiler for a few minutes. It usually satisfies my need for something sweet and tasty.

I like eggs, but not fond of vegetables or fish.
You are just too good of a cook to keep dh slim! I must be a terrible cook cause mine never gains a lb!

I am trying to eat more foods that are real. I do use splenda in my coffee but that's about it. Veggies with Mrs. Dash. Whole grain rice, bread, pasta and cereals. fruits that are not sugar laden. Small amounts of salt. I do use Brummel and Brown instead of butter but if I do use butter, I use less. Instead of butter in pan to fry eggs, just use olive oil.

ReplyDeleteMany people I know have had a great success with the South Beach diet. Good Luck. I really really need to try but I'm being a whiney cry baby about giving up my anything white. And I know I would feel 100% better and lighter.

I've seen this recipe. I have found some good stuff on some of the gluten free blogs, and the Mediteranean diet is excellent for heart health, we were told.

Oh I know that's a tough diet BJ! Earl and I did Atkins a few years back, so successful but I simply cannot seem to get back into it. We actually froze berries and then poured just enough cream or half and half over them so it froze like ice cream, a little bit of sweetener and it was a treat! I also have a low carb cheesecake recipe I'll send you in the email. Top it with berries and it's legal!

When I was diagnosed with diabetes last year, I had to do pretty much the same thing. I had already been using only olive oil, eating less meat, and all that stuff but I hadn't cut out the white. And had been on a sugar binge for months from stress at work. The first week I thought I'd die. The second week was hard but not as hard as the first week. And then the energy I hadn't had in years started to come back. Along with the exercise which I hadn't done in years brought my blood sugar back to normal without medication within 4 months. Yea! After you get off the white, you won't want it nearly as bad and sugary things will taste icky sweet - I promise. For sweetening drinks try raw agave syrup. It's at the lowest end of the glycemic scale and doesn't cause your blood sugar to shoot up too quickly like most sugars do - that's what makes you hungry again so soon after you eat sweets and makes you want MORE sweets. And it doesn't have any specific taste (I tried every kind of stevia that was on the market and hated them all) just makes things taste sweeter. Good luck - you CAN do it!
ReplyDeleteOh and eggs - try this one. Beat up six eggs frothy. Spray a regular sized muffin pan with cooking spray. Into each cup put a couple of chopped leaves of spinach, a little chopped sun-dried tomato (the smoked ones are especially good), and a tiny pinch of cream cheese (or feta or whatever you have). Pour the eggs evenly into the muffin cups over the other ingredients. Bake them at 350 just for a few minutes until the eggs are set - REALLY good!

Those cookies do look good for what little they have in them. I went on a diet last Summer and lost 27 pounds and have kept all but 3 off, even through the Winter months. I am not so muh an egg gal either...I really have to doctor them up big time!
