A Texas Country Supper

Mr. Sweet and I both grew up on COUNTRY foods...
many times, we had veggie meals....NO meat.
We STILL do ALL VEGGIE meals at least once a week....
sometimes, more.
Altho I didn't care for CORNBREAD when I was younger...
I sure do love it now.
 ♥ ♥ ♥
SOUTHERN CORNBREAD....
thin....crisp...buttery...NO SUGAR ADDED !!

Both Mr. Sweet and I grew up on this kind of cornbread...made in a cast iron skillet that's been seasoned well...
We like ours thinner than a lot of people because we both LOVE crispy !!
1 cup yellow cornmeal
1 cup flour
1 egg, beaten
a couple table spoons of melted shortening or bacon drippings, butter
1 tsp. salt
1 tsp. baking powder
enough milk to make a nice thick batter..
(I LOVE Buttermilk Cornbread so this is what I use)

Pour into HOT skillet that has a tad bit of shortening melted..
Cook at 425 for about 30 minutes...
We use a huge cast iron skillet so it will make the cornbread thinner...IF YOU LIKE YOURS THICKER, use a SMALLER skillet. It HAS to be CAST IRON, tho...
 The divided CAST IRON skillet you see here is from CRACKER BARREL and
it's a  CORN BREAD MAKIN' HONEY
......you get CRISPY all the way around ea. piece.
I LOVE IT.
I have heard that in some parts of the country, the people DON'T EAT BLACKEYED PEAS....
WHAAAAT ???
 I just can't even IMAGINE that....blackeyed peas are our favorite food on the planet.
We grew up eating them.....both our moms planted lots of BLACKEYED PEAS in their gardens.
 ..and right next to the goodness of blackeyed peas, comes 
GREEN BEANS AND WHITE POTATOES.....
UMMMM.....served together, in DIVIDED PLATES, along with ripe tomatoes....

(I say DIVIDED plates 'cause I am a such a titty baby that I don't like my foods touching....)
 SWEET TEA and....
buttered CORNBREAD....
Why, Mr. Sweet and I think we have died and gone to Heaven.

Oh my .... I would kill for my Grandmother's Cornbread but alas ..... I shall taste many cornbreads trying to find the same!! Tee Hee!! Not a bad thing!! I LOVE CORNBREAD!!

We love our cornbread here, too, and I always add fresh (or frozen) corn kernels to the batter. MyHero likes his UNBROWNED (pffffttt) so he would eat the inside pieces and everyone else would eat the outer ones.

I never had black eyed peas until I was well into my 20's so never really developed a taste for them..so you can have my share if I ever visit you!;>)

I always make my cornbread in a cast iron skillet too. But no dividers in mine. Wish I could talk my hubby into veggie meals. He doesn't think he is eating if he doesn't have meat.

Black eyed peas are a fav around here too..

cornbread was dessert in my grandma's house. big ole glss of cold milk and a slab of cornbread- yep, it was wonderful.

we also use divided plates, neither me nor the kids can handle our food touching.

that plate looks yummy..

Don't know about goin' to Heaven...more like a weekday kinda' meal where I grew up in South East Kansas. My MoMa had Southern influence in her upbringin' and we learned early to eat black~eyed peas. I love 'em...just not on New Year's Day! Cornbread is one of "Mr. Ed's" specialities!!! Set a couple more of those divided plates...'cause we're on our way over!

I love cornbread but black eyed peas are not my favorite, I grew up on Pinto beans...YUM!! I like that cornbread pan, may have to visit Cracker Barrel. hugs, Linda

I absolutely cannot stand it. We have got to be related! I hate my food touching...and I absolutely will not eat after anyone...ie their fork...and I won't eat dessert on my dinner plate....
My husband says I am the Princess and the Pea!!

Your post made me hungry for cornbread, good tomatoes and summer. Usually at our house we eat slightly sweeter cornbread, but I like any kind. Loved your divided blue and white plates, I've never seen divided plates in that pattern. They have such a good old-timey feel.

We like all kinds of cornbread! My husband likes it a little sweet and I think my favorite is when it is almost gritty with cornmeal. I love it when it is made with creamed corn in it and with butter and honey! We love veggies too and are perfectly happy without meat. We do that often in the summer when the produce is fresh and yummy!

That country dinner looks SO delicious! It has been a while since I've made black-eyed peas. I have some in my pantry and now I want to make them soon! I've never seen a cornbread pan like that. I like how you can make individual slices.

This looks SO good, BJ. We like to bake our cornbread, then fry it in a little butter! Yum! I made ham and bean soup with the ham bone from our dinner last week. It's such a good feeling to be able to use every bit of that expensive ham! And it was good! How do you make your black eyed peas? I have only had them in 15 bean soup that comes with all the seasonings.

That's good eatin' right there! My Mom and Nana and their "kin" are from Texas! We eat our blackeyed peas with tomatoe and onion slices! Yum! I make my cornbread just like you, not sweet like cake, crispy and wonderful slathered with butter! Daddy used to crumble it into milk. I grew up on Southern cooking. My Nana used to say that every good cook worth her salt had a coffee tin with bacon drippings in her fridge for cooking with! I no longer do that, but boy was it the best. Green beans with bacon grease.....yesiree!!!

surprise! I love cornbread too and had some today with a pot o stew. I also make mine in a cast iron skillet-my recipe is the same as yours. But, hey, I'm a Texas girl too, you know. the left over cornbread is mighty good in a glass of that buttermilk.

Hi BJ! What a yummy post! When I was a kid I hated green beans, potatoes, and Ham...Mom always added Cottage Butt, but today I make it at home..in my Lodge Dutch Oven...ummmmm

I love an all veggie supper, especially in the late summer when it all comes from the garden. I love cornbread too, but the sweet northern kind I was raised on. Forgive me, I have never had black eyed peas, maybe some day I'll come to your house and you can cook me some of that southern food I've never tasted:>)

My daughter in law is the same way, she doesn't like her food touching:-) Your meal looks sooo delish and one of these days I'll have to taste black eyed peas...yup, I had never even heard of them until I started blogging! lol I don't know of anybody that makes them around here, don't even think you can buy them in the stores here. I asked mom if she had ever made cornbread and she said once when we were little but nobody liked it so she never made it again. She doesn't remember her own mom making it. Must be just a southern thing:-)

I don't like my food touching either:) I had green beans with onions cooked in, meatloaf and grilled squash... it was mighty yummy too! I love black-eyed peas with pear relish and buttered cornbread is a must!

Yep, its true...us northerners don't do black eyed peas unless they grew up on them in the south. LOL I'm anxious to try yours, BJ, just so I can say I've tasted them.

Love your cute little cornbread skillet. I swear, there are more versions of cornbread than there are stars in the sky. Everyone seems to have their favorite & I can't get DH to eat it at all. *sigh* He says its "too dry".

My brother & one of my grandsons are fussy about their foods touching one another. The GS cried big tears once when I set a roll on the side of his plate & it came in contact with another food. Strange!

Thanks for teaching us about different foods & tastes. I enjoy learning from you, BJ.

Looks sooo good! I still don't do cornbread, but I sure do love me some blackeyed peas! We used to do veggie nights when my sons were little but have gotten away from that. I think it's a great idea again since it's usually just the Mr.and me now. This is definitely my kind of veggie meal! Looks delicious!

Well bj ... that is my kind of dinner, but I will leave off the onions and take another slice of tomato. I can make a meal on a thick slice of tomato, salt, pepper, salad dressing between two slices of toasted wheat bread. YUM. Also like the crusty cornbread cooked in my small skillet. Need one of the divided pans for more crust.Have not heard "titty baby" in so long an it made my laugh.Hugs.

I grew up eating the thick cornbread, it wasn't until I married (at 16) that I ate thin crispy cornbread. My mother in law cooked it that way, but with no egg. She had never heard of adding egg to the batter.
I love eating vegetables, especially in the summer when they are fresh out of the garden. I need no meat when I have fresh veggies. My Dad ALWAYS had to have some sort of meat. He was a meat and potato kind of guy.
Glad I stopped by for a visit. I really enjoyed it!!

Oh my! That food is making my mouth water. I am a southerner through and through (never lived anywhere else) and love good southern food! Black eye peas ARE a staple at my house too. One of our favorite meals is bbq porkchops with macaroni and cheese and black eye peas. You can mix the peas with your macaroni too and it's even better! My husband makes great cornbread. (He's the real cook of the house.) Thanks for sharing. I would love eating at your house!
