THREE GREAT THINGS...

#1. RAIN
Not a lot...less than a half inch, I think...As you can see, this was LAST month..
none so far this month...but, I'm hopeful..
But, boy, are we glad for every single drop that falls.
Everything smelled so good...and fresh...
and it just made everyone FEEL so much better.
#2. HOMEMADE POTATO SOUP...
I didn't have bacon fried...too lazy to do it.
I DID have sour cream....but neither of us like it.
(well, unless it has Brown Sugar in it for a dip..:>)

We both DO, however, LOVE  cornbread with our
potato soup.

The rain was falling, the potatoes were boiling, the cornbread was in the over...
It doesn't get much better than that....it all made me want to run put on a dress, high heels and a string of pearls.

I love the RED RIND cheddar cheese....do you?
I like grating it myself from a slab such as this one. It just taste better than the packaged grated cheese....BUT, I sure keep some of that in the fridge, too.

Another quick dessert....
large, canned biscuits, flattened out...(I've really been giving canned biscuits a work-out.)

A filling of cherries is sooo good in them.
I like the canned cherries...NOT the pie filling.
Add sugar to taste and a teaspoon of lemon juice and a tiny bit of vanilla, along with a bit of cornstarch or flour, for thickening....boil gently on top of your stove until the mixture gets a tiny bit thick.
O, and don't forget a sprinkling of cinnamon...
Fill each smashed biscuit, fold over and seal with fork.
I like them best FRIED...
OF COURSE, the healthier way is to bake them...and actually, they are good, too..especially if you added a bit of melted butter, sugar and a little extra cinnamon...ummmmm♥♥ (are they STILL healthy?)
I've posted about these before but...
there's just some things that are worth
GOING BACK FOR SECONDS.

We heard on the news that Texas was supposed to get rain..and I thought of you.
I love potato soup but for some reason don't make it all that much..oh..and you can work those buscuits to death because everything I have made so far has been fantastic. We LOVED the little waffles!
I did the cherries once a few years ago..and probably gained five pounds...yes I over did the eating!! I used the canned cherries but (ahem!)shortened it even farther by using the pie fillig! NOW that's bad! :)
Delicious. I want to do the cherries your way now..I have a feeling they are going to taste even better!
I hope it rains and rains for you!

Soup is definitely something that goes hand in hand with rainy days and the cooler weather.

Over here on the other side of the world we've just started breaking out our shorts and toe-less shoes and we're eating salad and barbecue.

What a perfect day...a light shower, soup smells and such a yummy dessert. I've never made my own "turnovers" like that, but you can bet I will now! Of course nothing makes me want to run put on a dress and pearls! Well, maybe the pearls...with my jeans and a really cute jacket!

bj, this is one of my favorite soups. My Mom made it for us while growing up and I made it for my son and now with just the two of us Jim and I still love it on a cold rainy day. One of my favorite meals while in London in December too. Glad your getting some rain, finally.
Happy Thanksgiving......

I am so thankful you had rain. That is a prayer answered. Cherry fried pies sound yummy but I must stay away I am afraid. I did make home made mashed potatoes for supper.

Don't know how I missed one of your excellent posts, but the minute I saw raindrops I had to come back and see what else I'd missed. Hmmmm, potato soup. You know, a dab of sour cream, if you could stand it, slows blood sugar from high carb meals. Aren't I a font of information? Ha!
