Chicken Salad....good for the soul

We do love fried chicken but for obvious reasons, we don't have it very often.
...bummer



When we DO have it, I try to fry an extra breast for later.
It's so nice to have next day, chopped...
sweet, juicy grapes...
...a few chopped pecans
and it all becomes.... CHICKEN SALAD...

                         

Altho we love it the ORIGINAL WAY...
pickles,
mayo
onions......
(which is the ONLY way I knew to make if, for years...cause it's the way my MOTHER made it....


We really REALLY like it with the grapes, pecans, mayo, salt and pepper...sometimes chopped celery...
and mild banana peppers are AWESOME in it.
It's just one of our favorite things...
How do you make YOUR chicken salad ?

I make mine with sweet onion, mayo, chicken and sunflower seeds, sometimes a little shredded cheddar or fresh parmesan too:>)

I make it with mayo, celery and a boiled egg...but I like adding grapes and nuts, too! It's a favorite around here! ♥

I love chicken salad too. Imake mine with very small pieces of celery, sweet onion, cut up blackolives and walnuts, mixed with home made mayo. Yummy! Happy Thanksgiving. FABBY

LOVE chicken salad... found this a few yrs. ago & now it is the only way I do it.
Chicken, celery, grapes, cashews, maybe sweet onions.... & the secret ingredient......
Kraft Poppyseed dressing.
I get so many comments & get asked for the recipe every time I make it.

That's the way I like my chicken salad in a sandwich!

Yours looks good! I use onions, celery, mustard powder, orange juice, mayo, pepper and an envelope of Geo Wasington gold. I either roast a whole chicken or some breasts to chop. And if unexpected company arrives around lunch, I can add a can of the chicken in a can from Costco to the fresh chicken I made.
Sometimes in the summer I make it with some pineapple and grapes too.

Mine is similar to yours. I use a little Vadalia onion (when I can get it) grapes, cashews, celery, dried cherries (or dried cranberries) mayo, a touch of garlic powder, salt and pepper and sometimes a bit of sweet relish. YUM...now my mouth is watering and I just ate! xo Diana

I love chicken salad. My usual has grapes, pecans, red onions,and curry.

And BTW, my guests Friday night LOVED the bread I got from your blog. It's the one made with the sour dough. The husband told the wife to get the recipe. THANKS.

That chicken salad looks delicious! That's a good idea to make an extra breast so you can make that. I love chicken salad with the grapes and pecans in it. Have you tried adding apples in it? that's good too.

Louis Dean makes a mean Chicken Salad. He cooks a whole chicken in the pressure cooker when he makes it.

nope. can't combine grapes and nuts in w/ chicken. eek! don't like nuts of any kind in any salad. my ckn salad is plain mayo with Camp Dog seasoning in it. :)

I think Chicken Salad must be a very American thing because although I've heard of it you dont see it much down under.

I think I have to try it though because it looks delicious (minus the nuts -Im allergic )

That's so funny, BJ! I roasted a chicken last week, so today we had chicken salad sandwiches for lunch and homemade chicken soup for supper. I've never made chicken salad like yours - but it looks soooo good I'll have to try it!

I love, love, love chicken salad. I make it both of the ways you mentioned here. I add just a spoonful of Marzetti's Slaw dressing...it makes it a little more sweet. Have a great Thanksgiving.

Great recipe; never seen it with it with grapes and will try it next time. We are in a deep freeze and I made my husband's favourite Chicken Rice Soup for lunch.

I do love me some fried chicken. Useing the left over this way sounds good. I have never used fried chicken to do a salad. Live and learn. Trish

I love chicken salad and make it the way your mother did. One of my favorite things..also put it in the processor, pulse a few times and make sandwiches. We have rain..so perhaps you are going to get more if not already. Have a great day, bj!

My chicken salad is the way it is because my mother made it that way, too. It's all ground up.

I like the idea of grapes because I love grape salad with cream cheese and pecans.

Whatever you serve for lunch is delicious. You have the gift!

I make a curried chicken salad using chicken breast meat, red onions, purple grapes halved and Hellman's mayo.
Add curry powder to taste.It's great.

I love mine with grapes and nuts...I baked rosemary chicken last night and I cooked a couple extra breasts for chicken salad for tomorrow!
