Bon Appetite....Freezer style

Every so often....probably about once a month,
we have what we jokingly call our
FREEZER BREAKFAST.
I am very big on FREEZING....if we have one biscuit left, it goes in the freezer...
...one piece of cake...2 cookies...
whatever.
When I make a meat loaf or a casserole, I TRY to make TWO..
One for NOW...
One for LATER...
THEN, we can have FREEZER MEALS  
This morning, MR. SWEET got the three STUFFED BISCUITS,
full of butter, cheese and, hmmm...I think these have BACON.

These are one of his very favorite things for breakfast so he was very happy
this morning to have them ...without any hassle...no waiting for them to bake.
Microwave those babies and they are ready to satisfy a hungry man's appetite.
...digging a little deeper in the freezer, I found MY bag of tiny
CRANBERRY SCONES...♪♫♪
OMGosh....I do love Cranberry Scones..
I will take SCONES of any kind over CRUMPETS.
I am thinking of making BUTTERMILK WAFFLES today, cooking them,
bagging and freezing...Ummmmm
HONEY HAM, sliced for sandwiches, so they are a tad thin to grill...
but, we did it anyway....and it was delicious. Just gotta be careful and barely warm them
or else they will be so dry you can't eat it.

See that yummy FLUFF in the bowl...? The light yellow that is LUSCIOUS..?
MY LEMON CURD..yes, ma'am...LEMON CURD is unbelievably good
on CRANBERRY SCONES.
Good GRIEF, it's good.
If you are hungry for CRANBERRY SCONES, you can try the RECIPE that I used making these.
I prefer the small scones and I just cooked these in muffin tins.
Scones are one of those things that, if you use a basic recipe, you go wild on what you want
to add......lemon zest...nuts...dried fruits of all kinds..
just go with it.

Since discovering LEMON CURD a few months back, I don't aim to EVER be without it again..it is delicious on every single thing I've tried it with...even on a spoon, right out of the bowl.

I buy it at the market, in a jar. Maybe....
MAYBE I might try making it sometime.
Usually when I find something already made for me....and it is slap-your-pappy good, I don't mess with it. ♥♥

AHA! I always wondered how just you and Mr. Sweet could eat all those luscious things you blog about EVERY. DAY.

I love lemon curd too. I once used it in a recipe for coconut cake. It was a Paula Deen recipe. That's such a good idea to make extras and just freeze them like that. That must be a lifesaver when you're not sure what to cook.

I use lemon curd in a dessert made with a meringue. I fill the meringue with the curd.. then top it with real whipped cream. Melt in your mouth good.
Love the idea of those scones. Such a good idea to make them smaller.

Your posts make my mouth water! I love scones! Ginger, pumpkin, maple, cranberry.....ANY scone! I used to make the Ginger ones fairly often and it calls for candied ginger. Ummmmm GOOD!!

We freeze things, too. This morning LD had a fried egg/cheese/bacon sandwich with a side of hash browns......straight form freezer to microwave. I toasted two slices of fresh bread and he was a very happy man!

We freeze things too. When I make biscuits, we'll eat a few, then freeze the rest and have them for breakfast when we want. Do the same with pancakes, waffles, and of course other meals. ;-)

You have an excellent plan. I made lemon curd once and was the only person in the house who loved it. It wasn't difficult as I recall. I think you'd make a really nice batch.

I like my scones baked in the skillet and served up in wedges. I agree...a good scone is far preferable to a crumpet, though butter on a crumpet is lovely, though one could do just as well with an English muffin if it comes to that.

How's the dust?

You are a smart woman! I've never thought to freeze biscuits. Great idea to stuff them and freeze them. Yummy. We are really consciencious about freezing veggies and fruit because they can always be used in something else. I'll look at food with a new eye now.

By the way, I just finished a cup of coffee and some homemade pecan pie. Mmmm. :)

You know, I used to be great about freezing my leftovers, even in small portions like you said, and then pulling things out for freezer meals. Ever since the girls went off to school, I haven't really done it.

I need to get back to freezing. You have inspired me.

I love making enough to freeze and have at a later date! Just this morning I took out a breakfast burrito from the bunch I froze last month and it was sooo good to just "nuke" it in the microwave and eat:-)

I had never heard of lemon curd until I saw a recipe asking for it. I went to every grocery store around and no one carries it here! I guess I'll have to cross the border one day and get some on your side! lol xoxo
