DIVINITY CANDY and VIOLETS

DIVINITY CANDY
and
VIOLETS...
two things my mother LOVED.
The little vintage VIOLETS saucer on the left belonged to her..
I found the other little VIOLET dish for a quarter at the thrift shop...
she would have LOVED it.
She always LOVED my little VIOLETS that ONCE grew all
along the front of my house.
WITH the drought we have suffered this summer and fall,
I lost every single one of them...bwaaaaaaaa


DIVINITY CANDY....O MY
I would ALWAYS make a couple batches of DIVINITY CANDY
around Christmas time and, I'll swear, I do believe Mama could eat a whole batch..by herself.
Well, I bought this big bar of DIVINITY at CRACKER BARREL and let me just say that all my family will find one of these in their Christmas Stocking...
MA-AAAN.......are they ever good. ♥♥♥



If I could have a wish come true tonight...

I would wish my mama was still here..we would be laughing and making candy..DIVINITY candy, full of pecans from my pecan tree.

"Jeanie...you do make the BEST Divinity".........."It's always good, Mama, 'cause I make it just for you."......
Don't we all have times we would like to go back to ?...I surely do.

Divinity is a holiday tradition in many households. Not so difficult to make, divinity should not be made on a rainy day, which is said to be an old wives tale but I’ve seen it fail so I’m lending credence to those old wives tales just for the record.
* 4 c sugar
* 1 c white corn syrup
* 3/4 cup cold water
* 3 egg whites
* 1 teaspoon vanilla
* 2 c pecans
Directions
In a heavy pan on low to medium heat, stir together the sugar, corn syrup, and water. Stir until sugar dissolves. Do not stir after that point but simply let it boil until it gets up to about 250 on your candy thermometer.This brings it to hard ball stage in candy making.
Beat the egg whites until you are seeing some stiff peaks form.Very carefully and slowly add a thin stream of the boiled sugar mixture to the egg whites. You should be beating constantly at a high speed. Add your vanilla and keep beating until the candy begins to hold shape and then stir in the nuts. (These are optional)
Using spoons to accomplish it drop the divinity onto buttered plates or wax paper.

I have never seen divinity in a bar before! It's a tradition at Christmas time for my family, but I remember once my mom made some for a grade school bake sale. I was so disappointed that it was all gone before I got there!

Yes, I sure do. I think of my Mom so often, in the little things that she loved.
I haven't had divinity in so long. Usually at Christmas only, and it's been a few years.

I haven't had divinity in years. I surely do think about those that are gone and my ties to them. My sweet little country gramma always had those round pink wintergreen candies in her apron pocket and would dole them out to me as we walked along in her garden. They were warm and melted in your mouth. xo Diana

My mother also loved divinity fudge and always made plenty of batches over the holidays. We'll have to do that again in honor of her and because we all love it, too. Sweet post, sweet memories. I think we'll get to make divinity together again some wonderful day. Until then, I'm going to make it with my daughter or my nieces or my grands or somebody!

Do you know, I have never had divinity? Have I led a sheltered life or something? It looks good. I can tell you and your mom had such a sweet love for each other just like you have with your kids and grands:>) You warm my heart BJ.

My grandmother made divinity. I have such wonderful memories of sitting in her kitchen when she made divinity and fudge. I couldn't have been more than five or six. We lost her when I was only seven.

I have my Grandma's divinity spoon! It was the wooden spoon she used to make divinity. One side is worn down from her beating the stuff! Ahhh, my sweet Mimi and her divinity... Sniff!

My MoMa made hers in a 9 X 13 pan, cut into squares and place a pecan half on the top...similar to the photo!Yes...I miss my MoMa, too! Thanks for your sweet visit and dear friend...I'm beginning to understand better all the time about putting out less and loving it more! HA!

I tried once to make divinity, and it wasn't good. I'm told that the weather is important. I don't know if that's true or someone was throwing me a crumb.

Maybe I'll try again.
or maybe... I'll just got to Cracker Barrel.

There is something timeless about Divinity and Violets. When I was younger my momma would get hungry for divinity and it was usually in the evening and she would march into the kitchen and whip up a batch. I don't ever remember her looking at a recipe. She had made it so many times that she knew it by heart.

My great-grandma, Nanny loved Violets. To this day when I see Violots, I immediately think of her.

I love divinity too. My mother made it because she could not eat chocolate. I could eat BOTH!

My Mom made divinity, penuche, and chocolate fudge at Christmas. When she passed, I tried to make divinity...I burned out the motor on my stand mixer, making this treat. She always put pecans and candied cherries in hers at Christmas.

My grandma was the BEST cook ever, and she made fabulous divinity. Divinity reminds me of Christmas. I like to make special candies and cookies at Christmas time, although I've never made divinity. Perhaps I'll try it this year. Lovely post!
