This is a favorite rerun from a couple years ago...
We were invited to a real CHUCK WAGON meal.
Our friends were dedicating a COWBOY CHURCH that Sunday and
cooked the most amazing OUTDOOR meal I've ever seen.

Rusty had to have both knees replaced and is wearing braces but let me say...
Those braces sure didn't slow him down on his cooking abilities !!
This is a vintage, olden chuck wagon that has been restored to almost new.
Being a CITY GAL, I was sooo impressed with all these happenings.
Rusty even had MR. SWEET peeling potatoes...he looked mighty handsome that day !!
Those pots...full of PINTO BEANS...HAM HOCK...PURE GOODNESS !

and...the COFFEE...there in that huge coffee pot...strong enuf to be DELICIOUS...

It was misty and a little cold this day...just absolutely PERFECT for the occasion!!
*REMEMBER... this all took place in the late fall of 2009
OOO, there's those magnificent RED BEANS...
I have no idea how to cook red beans OUTSIDE..on a camp fire...
but, I sure know how to make them using my mama's *recipe*, inside, in the crock pot.
pinto beans
ham hock
salt and pepper
water
cooked to a soft but not mushy state.....
ummmmm
One of my favorite meals in the whole world....
red beans
fried potatoes
fresh, sliced onion
southern cornbread and butter
sweet iced tea.
O HONEY
GOTTA GO NOW.... ..........

What fun for you, they do look like the real thing. I always love dutch oven cooking..the guys here do a lot of it and people from all over pay big bucks for such a dinner here. Love those gorgeous grand daughters bj..every one a beauty! ;D

ReplyDeleteBasic food including such things as ham hocks is the best! In a busy modern day, speed is what we use in making a meal sometimes.
ReplyDeleteHere, the chuck wagon is staffed by Rusty, a dedicated chef that could cook at the fib=nest restaurants - he has the feel and artistic flair that makes all he cooks tasty indeed. That such good food is prepared outside in any temperature means he knows what he is doing...
Are those biscuits in a cast iron skillet? Yummy!

bj, this looks like so much old time fun, and a history lesson to boot (no pun intended). A cool day with food cooked outside on a campfire sounds great. I love your expressions in your post, but this one about the "stout coffee, makes you want to slap pappy", Well I just lost it.
