I LOVE SUMMER SALADS..

We love salads in the hot summer time and
I made two this week that really
hit the spot.
Thought you might like to try them, if you haven't already.


The first is an
ENGLISH PEA SALAD
1 can English Peas or small pkg. of frozen peas, if you prefer.
chunks of your favorite cheese...I used Extra Sharp Cheddar
Red Skin Peanuts ...I use about a cup
Sometimes, I add chopped celery
Hellmans Mayo to taste
salt and pepper
This is my favorite GO TO salad for taking to parties and etc.
and my bowl is always empty when I come home.
THIS one is new to me...
I didn't have a *recipe*, as such...
JULIE  mentioned something about
pasta...fruit...nuts...
so I just winged it.
I used things we really like...
...a PRETTY PASTA, cooked..drained and rinsed with cold water
I added chopped APPLES
SWEET RED GRAPES
PEANUTS
CHOPPED PECANS
MAYO
It sure made a PRETTY salad...
I took it to our home fellowship gathering
and it was a big hit.
I will be making it again.
Just a tossed salad of your favorite
greens
tomatoes
onion
cheese.....the list goes on and on....♪♫



FRUIT SALADS
are absolutely among my very favorites.

The great thing about fruit salad...
you can add absolutely ANYthing to it.
FRUIT K-BOBS
are really HARD TO BEAT
in the hot summer weather.
I lift my glass for a TOAST to YOU...
To my friends:

Our weather today is supposed to reach 102 degrees.
All I want when the weather is like this...
AIR CONDITIONERS
ICE
and SALADS.

  3. Love salad in the summer and I will certainly be trying these, The pea salad sounds especially good! I just made a salad last night of warm french bread, chopped tomatoes, onions, feta and home made vinagrette. Delish!

  8. These salads sound delicious bj! I have a wonderful new cookbook called Salad as a Meal and I have been enjoying it! I have to avoid raw apples in them as my daughter is very allergic. As long as I bake them she is fine...a good excuse to make apple pie, apple turnover...baked apples with cinnamon.... :) Linda

  9. I love everything you showed us I just don't like to spend time in the kitchen. LOL Now HH does most of the cooking but makes nothing like that. But since you don't have to cook these summer things I might get out there and make one. Thanks for all the great ideas.

  10. Great salads! I have never heard of the first one at all! And the 2nd one is very different too. I will give them a try!

    Hope it did not get as hot as expected today. It was relatively cool here...upper 60's and we may have hit 70º. Hope your night is a good one. xo Diana

  12. I love salads and need to get back to eating more of them now! We love pasta salads...and garden salads with good dressings! I sure enjoyed the Girard's dressings, didn't you?

  15. I would love some of each. I haven't had the pea salad, but love peas and creamy luscious salads. I love that you put two kinds of nuts in. Why stick with just one! Yum. We did a summer pool party pot luck with just salads and it was fantastic.

  17. Ohhhh - I am going to have to make that Pea Salad for my hubs. He LOVES peas. I tried to grow them this year but apparently they dont like to be transplanted. Boo.
