SUNSHINE CAKE

We LUV cake 
and especially an 
ORANGE BUNDT CAKE
says she loves ANYthing with Oranges.
She told me once that 
"since oranges are so good for you, slice me a big ole piece of that cake."
That was regarding ANOTHER orange cake I made last year.
Bet you would love this cake, Mizz Lynn.

A little ROOSTER cuteness thrown in for good measure.
This turned out to be one of the prettiest cakes I've made in a long time.
My oven is all messed up with hot spots here and cold spots there
and that does NOT make for a pretty cake.
..do you love oranges as much as we do ?
It has an ORANGE GLAZE
that goes on it...
I made this one for our 
HOME FELLOWSHIP GROUP
and will put the glaze on just before we leave.

AMAZINGLY DELICIOUS CAKE RECIPE,

Of course, you might know that MR. SWEET and I were just DYING
for a piece of it for our breakfast...
Can't cut two big pieces out of a cake you are taking somewhere else...(even tho I wanted to)
so we just toasted some
BANANA NUT BREAD to eat with our coffee.
When we went on our GIRLY ROAD TRIP last week,
I bought this adorable wire fruit basket at the 
CHRISTMAS TREE STORE..
Now, that store is AWESOME.
So many cute things and the prices....well,
they just blew my mind.
Daughter and I went completely NUTS..
So many cute things there.
I am hoping they will branch out to WEST TEXAS.
Amazing heavy bundt pan ...CSN 
Little WAVERLY hot pads, full of cuteness and trimmed in RED...Christmas Tree Shop

ORANGE BUNDT CAKE
1 pkg. yellow cake mix
1-3oz box of Instant Lemon Pudding
3/4 cup fresh orange juice ( i used bottled)
1/2 cup oil
4 eggs
1 teaspoon Lemon Extract
****
GLAZE
1/3 cup orange juice
2/3 cup sugar
1/4 cup butter
**
MIX all ingredients together and pour into well greased bundt pan.
Cook at 325 for 50 to 60 minutes. (Mine was just right at 40 minutes..so be sure to check)
Let it cool for a few minutes, then turn out onto a FABULOUS cake plate.
ONCE COOLED..
In a small saucepan, add 1/3 cup OJ
2/3 sugar
1/4 cup butter
about 2 minutes.
DRIZZLE THIS LUSCIOUSNESS
all over that pretty cake.
Now, this topping is very VERY thin..
I put some of it on my cake and saved the rest for when it was sliced.
It looks kinda like this...


The most moist cake I've ever made...
and I love ORANGE SHERBET and MANDARIN ORANGES with a burning passion !
...and when you sprinkle
PAULA DEEN'S
OLD FASHIONED ICE CREAM WALNUT TOPPING
to....
ORANGE SHERBET,
WELL...
It WILL leave you breathless..

Well HONEY... the reason that cake is so delicious is because that's my MoMa's cake mix, too! No kidding! She cut the recipe out of the Kansas City Star back when I was in High School. This is my Daddy's favorite cake and we try to make it for him every June on his birthday. (Then we transport it 3 1/2 hours to go see him!)Thank you for sharing this with us. .. and for the memories!

Anything with oranges is on the top of my list as favorites and orange cakes are one of my favorites and I haven't one for a long time.

Oh, bless my soul, I am salivating! You can tell the cake is incredibly moist by the picture and then to top it with sherbet and marmalade and nuts - yum, yum, yum!

I have been known to sneak a little bite out of something I am taking where no one can see and cover it with frosting!!!

Here you go sweet bj...

Strawberry Bundt Cake

1 box strawberry cake mix
1/2 c. or (3 oz.) box strawberry pie filling, not instant.
3/4 c. frozen strawberries, (reserve 6 T. juice).
4 eggs
1/3 c. water

Butter bundt pan then sprinkle it with white sugar.

Mix all ingredients (except the reserved juice). Pour onto pan, bake at 350' for 50 min. Remove and cool slightly..warmish to glaze.

Strawberry Glaze

2 c. confectioners sugar
1/2 stick softened butter
6 T. strawberry juice you reserved.
red food coloring (optional)

Mix in sauce pan and boil 2-3 minutes. Remove from heat add 2-3 drops of red food coloring.
Drizzle over warm cake...enjoy! :D

This is an amazing dessert! So simple to make. I did use an electric chopper to chop up the mandarins. I also refridgerated the cake and topping before serving, which made it a cool refreshing dessert. It was a hit with the ladies at work. The frosting is wonderful, since made with whipped topping, it wasn''t as heavy as regular frosting, which was nice. This is one of the best desserts I have ever had!!!!
