ALL IS WELL WITH MY SOUL.....

We woke up to the nicest, softest RAIN this morning....
*
...and I had a brand new
COFFEE CAKE recipe from MARY WILLIAMS
*

....it called for BROWN SUGAR...ummm

Speaking of brown sugar...do you have one of these little BROWN SUGAR Bear's to tuck into your brown sugar ?

He keeps it SOFT.... not sure just how it works..he seems to be made out of ceramic or something close.


A light rainfall outside my kitchen window...

A hot, right out of the oven, COFFEE CAKE, cooling on my window sill...

I'm livin' the good life !

A perk of RETIREMENT... breakfast at 10:30 isn't half bad !

MARY WILLIAMS' COFFEE CAKE with STREUSEL
For Streusel:
1/2 cup brown sugar
2 T. flour
1/2 t. cinnamon
2 T. cold butter
1/2 cup pecans, toasted and coarsely chopped.
PLACE brown sugar, flour and cinnamon in bowl. Work in butter with your fingers until mixture resembles course sand. Add pecans and combine.

FOR CAKE:
1 1/2 cups flour
3 t. baking powder
1/4 t. salt
3/4 cup white sugar
1/2 cup butter
1 egg, beaten
1/2 cup milk
1 t. vanilla
PREHEAT oven to 350. Line the bottom and sides of an 8x8 pan with foil, shiny side up. Coat with butter or vegetable spray.
Sift together flour, baking powder and salt. Add sugar. Using a pastry blender or two knives, cut butter into dry ingredients. Add egg, milk and vanilla and combine.
PLACE HALF OF BATTER in pan and sprinkle half of streusel on top of batter. Add the rest of batter and top with remaining streusel.
BAKE 35 TO 40 MINUTES OR UNTIL TESTER INSERTED INTO CAKE COMES OUT CLEAN.
Cool on rack completely before cutting into squares.
(I never can wait until it's COOL...I like it straight out of the oven,
crumbly or not !! )

I think, sometimes, that we forget to count all the LITTLE things as blessings...
We tend to count just the BIG things... today's paper DOES have a BIG THING...
BP saying they HAVE THE OIL LEAK stopped....FOR NOW...

Hi there BJ, all is well with my soul too:) I had a great morning at Church after having my hot coffee! I came out of Church to rain, and it has been raining this afternoon! I just woke up from a tiny nap and it was NICE! Have a blessed day and thank for the brown sugar bear tip! I'll have to get me one! HUGS!

The coffee cake looks wonderful. I will definitely give it a try soon. We'll be eating it hot out of the oven too.

I saw that it's only 89 degrees at your house right now. Lucky for you, it's hovering around 100 here right now.

Thanks for the reminder about little blessings. My hubby and I were just talking about that a few minutes ago. In a day or two, I'm going to post about one of the little blessings in our home.

BJ, totally agree with these thoughts! It's often the little things in life that make it so sweet. We went to a birthday party at 5:30 and came home around 8. It had rained while we were away, and the temp is really nice. Yes, it's these little things that make for a good life. :-)

What a happy post...made me smile. I can almost smell that coffee cake and I would love to smell a gentle rain. We have thunderstorm watches out now, so we may get rain but I'm not sure it will be gentle.
