SWEDISH PANCAKE...
1/2 cup flour
2 eggs
1/2 cup milk
1/2 cup butter
2 teaspoons powdered sugar
Pinch of nutmeg, salt and a couple drops of Vanilla

MIX all together, leaving the batter slightly lumpy.
Pour into a hot cast iron LARGE skillet and bake 15 to 20 minutes at 425.
SERVES 2

It is VERY similar to the GERMAN pancake...
it didn't rise up and deflate like the German one...
It just more or less lay in the SKILLET, pretty much doing nothing but cooking and browning nicely...

We THINK we have to have crisp BACON with our breakfasts or brunches...we're spoiled !!*
or BRUNCH.
We've really worked up an appetite and EVERYTHING tastes so so gooood...!!
I am just using little dish cloths for napkins...The tiny strip of APPLE GREEN looked nice with the candles...
if I had asked MR. SWEET later what color the napkins were, he would have looked at me and said, "We had napkins??" All HE saw was that fabulous PANCAKE, STRAWBERRIES, WHIPPED CREAM and BACON !

Some of you might remember that I used POWDERED SUGAR with
the strawberries for our GERMAN pancake last week...

O, and homemade STRAWBERRY SYRUP....*
GOOD GRIEF but it's good...!!!

just make a simple syrup of sugar and water,
add sliced fresh strawberries and gently boil for 10 or 15 minutes
on top of your stove.
I just make enough at one time to last a couple of mornings...
there's no preservatives added so I'm not sure how long it would stay "good"..
so...when I am in doubt about things like that, I don't save it more than
a couple days...

It cracks me up how you and I love the same things so much. I've been having a hissy fit for one of those butter slabs too. I've searched the internet and sent emails trying to find one. Let me know if you track them down. Thought I found them once but they were sold out!

Another morning at BJ's!!! These look SO good. Whipped cream and strawberries...I could eat it on peas!! Your table looks very nice, I like the dishes from Ross. And I love the S & P shakers!!

Fabulous. The setting and the food look wonderful. You know I like simple tables, since I set it everyday it's usually not too fancy. I want to know how many bites you actually took, and how you keep yourself in such good shape. No doubt running around after that lovely granddaughter.

I purchased the reproduction Butter Slab online at Old Plank antiques a couple of years ago. The little pitchers were purchased at TJ Maxx last year. Cote De Texas blog sells a similar slab on her sidebar. I looked for over two years until I found the one I have. Good luck with your search!

What a yummy post....I will have to try the pancakes....sweet man of mine discovered Belgian Waffles while we were traveling and first thing at Sam's Club he found a B. waffle iron....delicious with strawberries and whipped cream, too, but he loves Vermonts Maple Syrup and some sausage best of all...
Your table looked so inviting....I will have to try and do better at making an attractive table other than at holiday's. lol! I forget now that it is just the two of us.

Bj we been making German's pancakes for years.We use preserves and homemade applesauce on that pancake. That Swedish pancake looks yummy. Thanks for the recipe, got to try this one soon. Lovely tablescape. Nancy

A very interesting pancake you have. I am from the Philippines living in Sweden for almost all my life.
Pancakes is eaten in Sweden every Thursday lunch with yellow peas soup with pork meat. Does it make sense for you? Ha ha... your so cute!
Well, not sure how you do to your pancakes. But it's so simple. Swedes use to have whipped cream and raspberry jam. YUMMY...

Bj, I made this for breakfast this morning. I wasn't sure if I did it right. All the ingredients go in one batter. I noticed it was very buttery looking when I looked in the oven window. The syup is to die for and yummy strawberries on the side. I didn't use whipped cream, didn't have any. Oh, well. It was good and it is sweeter than German Pancake. Have A good day.
