BISCUITS.....

GOOD MORNING, SWEET FRIENDS...

I'm ready for BREAKFAST....
ARE YOU ?














Low fat YOGURT is always good around here for breakfast...
But I have to admit that
WE LIKE BISCUITS BETTER ...!!

The original biscuit was a flat cake that was put back in the oven after being removed from it's tin, hence the French name "bis" (twice) "cuit" (cooked).

This very hard, dry biscuit was the staple for sailors and soldiers for centuries. During the time of Louis XIV, soldiers' biscuits were known as "stone bread."

**may I just add that MR. SWEET has mentioned, a time or two, that MY biscuits have been known to be hard, dry and STONE BREAD!.... but he was RUNNING when he said it !! hee heee..

O, and please notice my VINTAGE BLUE WINDMILL canisters in the background....

My recipe for the BEST homemade biscuits...FROM SCRATCH....

2 cups all purpose flour
2 Tablespoons baking powder
1 1/2 teaspoons salt
1/3 cup shortening
3/4 cup BUTTER MILK
(no buttermilk ?...just add a tablespoon (or cap full) of vinegar to regular milk (we called it SWEET MILK when I was a kid...every now and then, I say "sweet milk" and the grands look at me like I have
3 heads !!) ;>)

The dough needs to be moist...not dry, so if you need to add a little more milk, by all means, DO.

I like my biscuits baked in a CAST IRON SKILLET
Those crispy bottoms...
O HONEY !

425 for 15 to 20 minutes...until golden brown..just like in a magazine...
O...I HOPE YOU LIKE THEM...all buttered up and full of bacon, sausage, butter
or HOMEMADE CREAM GRAVY....

Actually...when I was a young thing...when my mother made
biscuits or HOMEMADE, TO DIE FOR CORNBREAD,
I would get up from the table and get a piece of "just plain bread"..
Can you even believe THAT ?

Oh Yum, BJ. They look amazing. I am adding this recipe to my book. My mother made the most delicious biscuits when I was growing up and even as an adult she would bake us a batch for special occasions. If I ever find her recipe I will post it. I so enjoy your blog. Nothing better in the morning (or anytime of day) than good home made biscuits with lots of butter dripping down the side...and a glass of cold milk.

BJ, this post is going to make me get up and go downstairs to make some biscuits. They are definitely a favorite around here. In fact, when I make biscuits, I freeze what we don't eat. Then we pull them out some mornings and have a biscuit rather than cereal. We like to put a sausage patty in between for a little breakfast sandwich. But biscuits with sausage gravy is my husbands favorite. That's what he wants to order if we go out for breakfast, and here in TX one can do that. ~ Sarah

Sweetpea, I hate to admit this but I can't even bake bread in a breakmaker! This is TRUE! I buy Rhodes rolls and hope for the best. That's just about the ONLY way I can get a decent "bread" but sometimes even that doesn't work when I try to let them rise. I'm hopeless. That's why they have Applebees, Olive Garden and Red Lobster...women like me. Hah

BJ, I made biscuits and gravy this morning, too! We haven't had them in months. I have never done them in a cast iron skillet but will try it next time I make them. I bought some really nice strawberries and like them over biscuits so I figured I could kill 2 birds with one stone...two different meals from the same thing!

Looks yummy and i would have loved to be there.
I love day old Biscuits split and buttered and toasted the next day.
We also used to break them up in coffee as a snack a mamaws. Goodtimes.

I have vivid memories of my Grandma early in the morning rolling and cutting biscuits before anyone else in the house was up. I've never quite gotten the hang of making them the way she did (it was pretty messy) and it's probably a good thing! I'm going to try your recipe as your's look just like my Grandma's. I laughed out your 'sweet milk' comment - we called the refrigerated biscuits "whack" biscuits because you had to whack the can on the counter. That one will REALLY get you some wierd looks, believe me.

Hi BJness! Oh, honey! An entire post about biscuits is right up my alley! Yours look so good and they are all puffy and tall. I'm going to try your recipe! Growing up, we called milk 'sweet milk' too. My mother still calls it that!

Hey there BJ, I love biscuits but don't eat them very often. I was raised on country biscuits. My Mama could make the best ones and my little Sister learned from her. You're not alone BJ - I am a true biscuit lover too.
I must say I've never baked them in my cast iron pan though, just convection oven that makes the outside crisp and the inside soft and crying for butter.

Lol, nothing wrong with loving biscuits BJ! I always make my grandmothers baking powder biscuit recipe and they are always gobbled up with lots of fresh butter and sweet honey. Makes me hungry just to think about it! Have a great week friend:>)

Doesn't seem strange to me at all that you did a biscuits post. Because #1 I can't make a decent biscuit (which I didn't know was french) and I am thankful you did this post. I am printing off the recipe and will make them tonite 'cause Bobby G. loves good biscuits. I have the cast iron pan and I even have some buttermilk in the fridge. Off I go now to whip up a batch of BJ's biscuits. :)

Growing up, we had biscuits often. For breakfast with gravy or supper with fried potatoes...yum! My Grandbabies, love to spend the night and help me make a batch of home made biscuits! Mmm...smothered with butter and apricot jam is my favorite snack!

The cast iron skillet is all the difference - I crave the crispier bottoms. I could enjoy these with the jam or perhaps a softened butter that will melt further in the soft insides of the biscuit. I guess with the amount of fat in the treats, the yogurt adds less calories to breakfast. No pain, no...you know that saying!
