....a cloudy day and 3 ripe bananas.....

I LOVE
RAIN
CLOUDS
THUNDER
LIGHTENING
This kind of day is my very favorite kind of day!!
and...
THIS PARTICULAR DAY...IT WAS RAINING AND I LOVED EVERY SINGLE MINUTE OF IT !!

I always...ALWAYS...want to bake something full of wonderfulness when it is raining...
*
and this day it was
BANANA NUT BREAD...
another favorite of mine!
**
I used regular white cake flour for this...
but, I DID use SPLENDA instead of sugar.
I have found that everything baked with SPLENDA turns out DRY...
Surely with 3 ripe bananas, this bread wouldn't be DRY....!
It also doesn't seem to rise as much using Splenda...
*NOTE..
I just learned to add extra baking powder when using SPLENDA...

This is that little vintage nut chopper that was my mama's...I've told you about it before....
I have an electric chopper...but I tend to want to use THIS one..
It's just special !

Actually, I could just eat this BATTER with a spoon, raw eggs and all....
ummm...I always like to have a few WHOLE halves of pecans, along with the chopped..

...but *sigh...guess I'd better bake it !!

...in a RED loaf pan, of COURSE...so here it is...
all ready for the oven...

Come on it...have a seat here at my breakfast table..let's have a slice as soon as it's done...warm...right out of the oven and smeared with good ole buttah....sound ok with you?

Since I KNOW there's a lot of people that DON'T like cloudy...

I tried to set a sunny table for us...little yellow plates, thrifted from GoodWill.... and that cute cup with the cherries.I just love it! Sweet Valarie at GLIMPSE OF MY WORLD sent it to me and I've really enjoyed it.

O, and those little cute place mats were made for me by my lifelong friend, ALICE...I just love them! but I love ALICE more !!

Ummm, here we go...
warm and smelling so SOOO good...
It didn't rise up as pretty since I used the artificial sweetner...
and didn't use the extra baking powder.....*sigh...
BUT the bread was nice and moist, due to all the bananas....

No special recipe here...just use YOUR favorite !

O, and I meant to show you those little cherries inside the cup..
I just LOVE cuteness !!

for just pennies and I think it's adorable...cheery and bright.

Hi BJ. That banana nut bread looks yummy. I think i'll make a banana bread over the weekend too. :)We had cloudy days that last couple of days in my part of Texas. Today was a sunny day though. I love your cups with the little cherries on them:)

When I saw the words 3 ripe bananas I KNEW we had some babana bread coming:>) I love rainy days too, especially spring rain with lots of thunder! It would be so nice to smell the fresh banana bread right out of the oven and the coffee brewing and to sit down at that pretty little table with you and enjoy some talk and laughter:>) This post is the next best thing to being there!

BJ, how do you do it? You make everything look so pretty! I love your dishes and that cherry cup is adorable.

I made banana carrot nutbread today...on this sunny beautiful day! It's pretty good. We are trying to lose a few pounds so I'm hoping the addition of the carrots will make it nice and healthy. :)

BJ-I love a good storm every now and then too. In fact, I much prefer it to just boring overcast :) Great for hunkering down with a good book or movie. I agree with you on the Splenda!

I have a set of bowls just like your cups! I love your little nut chopper too. I love to bake on rainy days or when it's cold and snowy...I love banana bread too, it's always so good! Come say hi :D

bj.the recipe is correct but adding a bit og fresh lemon wouldn't hurt I'm sure. Yes it can make a whole bundt instead too. :D

I love storms and thunder also. And I, too, have had trouble with the spelnda; I even tried the baking mix one but it was very frustrating so I went back to the regular old way. Your kitchen must smell like a little piece of heaven on a rainy day!

I knew where you were heading with that title! I love Banana bread and My Little Daddy loved it better than anyone ever. My Daughter would make it for him ALL the time. He would brag on it and tell her it was the best he ever had. He would freeze it so that it would last longer:) Thanks for triggering that sweet memory. I miss My Daddy:( Hugs to you Dear BJ!
