I LOVE ME SOME FINGER FOODS....


CORN PATTIES...aka Corn Fritters
My mama made these for us all my young life and I make them every time I think about them...
Whole corn, cream corn, fresh corn, canned corn, frozen corn...makes no difference.
Left over corn is usually when I think to make the patties...
adding flour, onions, cheese, peppers, an egg......whatever I happen to have on hand.
My kids and grandkids all love these little tidbits....

PEANUT BUTTER filled celery sticks....who doesn't love these?

Apple slices with peanut butter and crackers....
my gosh, how can a kid grow up to be strong and healthy without this treat?
CHEESE, dips, spreads....on RITZ CRACKERS is just about Heaven on Earth...

Of course, our little PIG IN THE BLANKET snack that EVERYbody is bound to love!

These are CHEESE CORN MUFFINS that just flat melt in your mouth...
O honey !

.....and THIS.....
HOMEMADE fudge, full of nuts and downhome goodness just
brings me to my knees....
I'm pretty sure I could kill for this !!!

I love finger foods as well. I've made zuchini and potato patties, but never corn patties. I must try them! Like hushpuppies. Thanks for the yummy inspiration!

Peanut butter and celery is one of my favorite lunches--also cream cheese,crackers and pepper jelly! And of course, chocolate :)

If I can only pick one, I'll take the corn cheese muffin..but I would really like a taste of them all!
My mom used to spread Wispride cheese (do you have that in TX?)
in celery.
And I love those little pigs in a blanket!

Great grief..you had me with the corn fritters, then had me worse with the cheese muffins..and ooo,that fudge. I would almost mud wrestle for some good chocolate or maple fudge. Note, I said almost..:).
Now, I really want some fudge..

I have always envied people that could eat celery with peanut butter or pimento cheese. It looks so good! I really want to eat it too! Just can't get it down!

I love cheese (especially gouda!) with crackers. We would take saltines, peanut butter, and top with a marshmallow. Broil a few minutes till melted. Another favorite is toasted pecan bread ( from Corsicanna,TX) with cream cheese.

Your fudge is so good looking!

Everything looks wonderful, but the cheesy muffins and the fudge have me at the table with a bib on :-). We've lit the wood stove for the first time tonight. It is time to think about some serious comfort food. You beat me to it. Have a wonderful weekend.

Okay, here's my favorite secret indulgences that no one else eats, as far as I know. I call it my heart attack sandwich.

In a skillet I heat up leftover corn fritters and fried green tomatoes. Then I layer them on a good buttermilk bread with sliced avocado and lots of mayo!

But hey, I only eat fat-free mayo and avocados are actually good for you, so it's not that bad is it? Or is it? I don't care, I don't have them that often, but I'm in heaven when I do!

Cheese Whiz in celery, that was always my favourite:-) Your corn patties look so good, that's something I've never had! Like you, I love finger foods and would rather eat that than anything else. Chicken fingers, mushroom caps, onion rings, pigs in a blanket, etc...bring it on:-) Now send me some of that fudge!!!!! Yummmm! xoxo

Ooooh...you had me at the corn fritters! Haven't made them in years. I always made them from leftover fresh corn on the cob. Nancy (That fudge is lookin' mighty "sweet" too!)

I love a petite treat. It's the only (teehee) time I allow myself to eat a dozen of anything at one sitting. Tiny bites means tiny calories, right?
