The mail man brought my new issue this morning...
and my mouth started watering for those delicious pies.
Some of these are little mini pies...individual, if you will.
Too much work for MOI....I'm getting lazy in my olden years !

THIS cake looked so good to me, I decided to make it.
I have our home fellowship group coming on Sunday and I needed a good dessert..
This one, along with some Cranberry muffins and what other desserts some of the ladies might bring, sounds good to me.
We always have a great meal..."breaking bread together...."
every Sunday !!

I made it and put it in the freezer....
then, on Sunday, I will fix the glaze for it.

CHOCOLATE LOAF with BUTTERSCOTCH GLAZE
1 cup whipping cream
4 oz. semi sweet chocolate, chopped
1/2 cup unsalted butter, softened
1 cup packed brown sugar
3 eggs
2 tsp. vanilla
1 1/2 cups flour
1/4 cup unsweetened cocoa powder
1 tsp. baking powder
1/4 tsp. baking soda

1. Preheat oven to 350...butter and flour your pan (I use Pam) 9x5x3 loaf pan.
2. In a small pan, heat whipping cream until hot, not boiling. Remove from heat and add chocolate. Stir until all mixed and let cool.
3. Mix 1/2 cup butter (1 stick) with your mixer and add 1 cup brown sugar. Mix until fluffy. Then add eggs, vanilla and the cooled chocolate mixture.
4. Combine all dry ingredients and add to the butter mixture.
Beat until well mixed and pour into prepared loaf pan, smoothing the top with a spatula.
5. Bake about 45 minutes or until toothpickcomes out clean when stuck into the center of cake. ( my oven cooks a little fast so I took this one out at 35 minutes).

In a skillet, combine 1/2 cup brown sugar, 1 tablespoon lemon juice, 3 tablespoons of water, and 3 tablespoons of unsalted butter. Cook and stir over medium heat until sugar dissolves, about one minute.
Stir in 1/2 cup sliced kumquats, 1 tangerine, sliced and seeded and 1/4 cup cranberries. Cook, stiring often just until kumquats start to soften, about 3 minutes.
Remove from heat and pour 1/2 over cake...saving the other 1/2 to serve along with the slices.

NOW....may I just say THIS....
At this posting, I have not tasted this brand new cake
I do know for a fact that it took me 45 minutes to get it all together and I am sure I used every single measuring cup, spoon, bowl and beaters in my whole, entire kitchen
And chopping those hard squares of chocolate..
was. not. fun
I had it all over the counter, sink, floor and me! I didn't like that part of it very much...can you buy the stuff already chopped???
WHEW.....i'm just sayin'.......

just waiting to be dressed on Sunday ... just before some of the sweetest people on the planet come over to celebrate JESUS CHRIST with us.

That is the worst part of making a recipe with the chocolate that you have to chop, but it usually is oh so worth it!

Sorry I have not been over to visit in a while. It is show season and my life is one big blur!
We are doing well..counting down. Don only has 7 more weeks of chemo and then we just have to wait to see if it worked. Doc said the first 6 months are crutial. Thanks for thinking about us!

I just love those desserts that dirty every spoon, bowl and measuring cup in the house. They are always soooo nummy! We just had our Canadian Thanksgiving and a shame, because I would have tried this chocolate loaf. Maybe for Christmas though? Thanks for posting!
