GUESS WHAT I DID TODAY.....6/16/09

YEP...I made STRAWBERRY PRESERVES...

O...I just LOVE this day ...
I surely DO love the color red...especially when you can eat it...

I usually use the recipe on SUREJELL packages but
I wanted to try this new recipe...from a blogger....that I am so SO
sorry that I can't remember just who: please let me know so I can acknowledge your name...

SOUTHERN STRAWBERRY PRESERVES

4 cups strawberries, washed and capped (now, my strawberries were so large that I cut them in fourths..

1 cup water

4 cups sugar

Sterilized Jars, lids, and rings ( makes 2-3 pints) ( i actually got 5 half pints and HOPE this IS GOOD for 3 OR MORE...?)
Wash jars in hot water with detergent and rinse well, or wash in the dishwasher. Place clean jars in boiling water to cover and boil for 10 minutes. Keep hot while you prepare the Preserves.
Prepare the lids and rings according to manufacturers recommendations.
Combine water and sugar. Cook until it reaches soft ball stage or 235 degrees F on the candy thermometer.
Add the strawberries and cook over high heat for 15 minutes. Skim off foam while cooking.
Put into sterilized jars, leaving approximately ¼ inch of headspace (air). Wipe rim and threads with a damp paper towel to remove any sticky sugar residue and seal lids. Tighten lids, but do not over-tighten. Turn the jars upside down to cool. Put partially filled jars into fridge immediately.
Inspect the jars to be sure they sealed. As they are cooling you may hear them “pop”. This is a good sound- it means the vacuum has pulled the lid down. Any jars that do not seal should be put in the fridge to use first.

*this is the first time i have used this recipe...the preserves taste like a million dollars while the , ummmm, texture, I guess, is different from any i have made before..hard to describe..i guess i could say it is "a little stringy"..meaning when i lift my knife after putting it on my biscuit, it "strings"....almost like stringy cheese. Not sure what caused this or if it is SUPPOSED to have this consistancy...ANYWAY...sure taste GOOD... making it at home lets you use MORE strawberries and it tastes SO FRESH..



this photo was made AS SOON as i finished cooking...the perserves are still warm and so is the hot biscuits with melting butter...all this photo needs is a cup of HOT, sweet coffee....and YOU!!

OH MY WORD!!!! Where is a scratch & sniff patch when you need one!!!! BJ my mouth is watering so bad I need a napkin!..Girl I have never made jelly or preserves in my life but you make me want to start...my grandmothers use to make every jelly ..jam...and perserve you could imagine and mama use to make 'strawberry' perserves with figs and strawberry jello....and your pics are beautiful girl...what kind of camera do you use? Man it is late at night and I am wanting to go look in the kitchen for something to eat..I can't even make biscuits aughhhhhhhh! lol lol Have a great week sweetie.

Would love to come for breakfast. Welcome to 3 or more. This is my first Ruby Tues. I have never made strawberry but we do Mustage grape jelly from a huge vine on our property. And have also made black berry jam, but not recently.

I'll keep my eye out for the recipe location.

I have never never worked up the courage to try to make preserves but have always wanted to because I love love love homemade jellies and preserves. You go girl!! BJ... these look delicious... I've been thinking about doing the same thing... but no time...no time...

my grandmother use to use a very similar recipe... we'd pick strawberries from her garden and bring in a little basket full... she'd make preserves... sometimes a jar or two at a time... good memories...

if you see a stranger at your door... drooling... it might be me!

BJ Wow I am headed to the treadmill, the pictures and your description alone caused me to gain a few pounds and I don't need them.
I have never done any canning, Roy bought me a video several years ago and I looked at it and decided this wasn't for me, but seeing your preserves makes me think I might try. I say also RED YOU CAN EAT IS GREAT.

Hi BJ, looks just mouthwatering - you clever thing. A car boot sale is probably a cross between a garage sale and flea market, you clear out your junk, put it in the boot of your car, drive to a field and sell it. We tend not to have garage or yard sales here, so the car boot is the best place to go to rummage through other people's junk! Mr. Bloom says thanks for the hug, right back at you!
