5/11...COOKIN' BLUES..

It's our FUN DAY with SMILING SALLY at our weekly BLUE MONDAY event...
It's a time that we can post about ANYTHING that is blue....
She has the list at her place of all the other blues around...
Go over and say HI to everyone...Just click on her name to take you there....
*
and, THANK YOU so much for stopping by to see MY blues ...

*

(why are nearly all my posts about .....food ?)
*

OF ALL THE FOODS IN THE WHOLE WIDE WORLD....
CHICKEN'N DUMPLINS
are MY COMFORT FOOD !!
*
The above recipe is from my mother ( from 1960) and she could make
THE BEST ones in the whole wide entire world.
I have used this recipe time and time and time again
and, altho MR. SWEET says they are just like hers,
they never taste quite the same to me...
it's that way, don't you think...? Nothing ever taste as
good as what your mom made !!
*
This is, indeed, a great recipe
and like most things that are GREAT, they take a little
time to prepare.....
*BUT...
dumplins don't have to be made "from scratch"
to be delicious.....
no... they don't....!
*
*
The dumplins can be made many ways, as you probably know,
that are MUCH quicker than making them from scratch...
BISQUICK is a great, fast way to a really good dumplin..
I don't like mine THICK...so if I use this to make them,
I drop very small amounts at a time into the boiling broth...
now....you COULD roll them thin but then we're getting back into
the TIME thing !!
MUCH faster to just drop those babies from a spoon!!
*
Ever try FLOUR TORTILLAS for the dumplins ?
Pretty good but.....not really my favorite...
Good, tho !
.......sorta....
nahh...just forget using tortillas....:O)
*
I use the CANNED biscuits...... a LOT...
I like the flaky ones that you can pull apart into
really thin pieces..
(these shown aren't the flaky ones but.....
they ARE in a BLUE can ! *wink
*
THIS pkg. of chicken was a ' BUY ONE GET ONE FREE....'
I LOVE THOSE !!
and I also LOVE my little, cute, SASSY ROOSTER...
my daughter*in*law, KATHY, bought this for me....
She's bought several of the pretty roosters around my cottage..
my thanks, Kathy girl....
note....i've used canned chicken, chicken from the deli...
you don't HAVE to have boiled chicken pieces to make a fabulous pot
of Chicken'n Dumplins...
*
He looks like he's thinkin'....
"Hey, mon...what kinda deal is BUY ONE GET ONE FREE...?
"WE SHOULD AT LEAST BE PAID FOR EVERY SINGLE PACKAGE OF US!!"
*giggle
********************************************************************
oooo......
AND.......
*
THIS is straight from the "FULL OF BLUE " TEST KITCHEN of bj.....
*
I made the 3 Ingredient COOKIES
using SPLENDA and just wanted to report...
Altho they are NOT as good, naturally, as with REAL SUGAR,
they are pretty darn good....great with milk or coffee/tea when you are
craving something sweet but need to lay off REAL SUGAR..(.the story of my life !)
*
NOW...Mr. Sweet prefers CRUNCHY PEANUT BUTTER...
Me....SMOOTH..
either is fine ...
and that's....
*
1 cup SPLENDA
1 FULL cup of PEANUT BUTTER
1 measly little egg....
350 for about 10 minutes..
*
I've shared this recipe with you lots of times but
had never tried SPLENDA instead of REAL SUGAR...
I just wanted you to know it works....
*************************************
HERE...please have a cookie !!
Oh, that's right...NO SUGAR ..... you can have all you want!!
*

blessings, bj

You're making me hungry! This is a nice way to continue celebrating mother's day - with a Mom's recipe.

She sure sounds like a wonderful mom (while reading your previous post dedicated to moms) :-)

Good morning BJ, I skipped over to your name this am because we'll be off soon taking photos. I make chicken and dumpling alot and I use Jiffy biscuit mix. It is good too.
My family loves this dish. My brother-in-law thinks I hung the moon when I make them for him. He doesn't know how easy it is. I have never seen your cookie recipe. How can it be so easy? LOL. I will try them.

Have a fun and happy day.

Hugs xoxo...Jeanne

Edibles in blue wrappings work for me...Is it time for breakfast yet???

Have an awesome Monday!

I got a kick out of seeing how much blue was on the labels. Do you think that blue is a marketing thing we don't know about? I think the cookies would taste great, especially if it was one of the only kinds of cookies you could have!

I love chicken & dumplings too. Earl makes really great ones:>) I hope your Mothers Day was wonderful. I meant to tell you that your mother must have done something very right to make you love her so. I hope my children look back on my life with as much love as you have for your mom:>)

Normally "blue" and "food" don't work well together, but you pulled it off successfully. :)

I had forgotten about bisquick dumplin's! I usually get chicken and dumplin's when we visit Cracker Barrel. Not the same as Granny's but good.

Hi BJ, it's been a while since I've commented but I have been stopping by quite regularly to see what you've been up to.

Just wanted to let you know that I've followed in the footsteps of many other RMS'ers and finally started my own blog! Yep, I'm officially a real blogger now, instead of just a blog reader. I'd love for you to come by and see me when you have a few free minutes!

I have the 'kitchen blues', but not from the color blue - I just can't think of anything new and exciting to cook. Chicken & dumplings/biscuits is a regular around here - they are good, but I need something to wake up my tastebuds. Guess I need to search your older posts for some Tex/Mex food. That does sound good. Sally
