~ FUDGE ~ *sigh....

There's not too many things I love more than FUDGE.....


GOD.
FAMILY...
JOHNNY CASH...

We made this candy all the time when I was growing up, just my mom and I.

We always had such a good time together while making it....I am thinking that's one reason I still like it so much.....

....a comfort food......

.... thoughts of my little mother.

I would LOVE to make it just one more time...with her......

I am OLD...but believe me, you NEVER get too old to miss your mom and dad !


The smell of chocolate filled the entire house back then....and still does today. I never smell chocolate, especially hot, bubbly chocolate, that I don't think of my childhood and my mother.....


......and the friend that lived across the alley that joined me almost every weekend, during Jr.High, to spend the night and....make FUDGE.



This particular recipe actually is for FUDGE ICING....and it makes a fabulous icing if you stop beating it before it gets very thick. In fact, it is my FAVORITE icing for a white cake..... well, for ANY cake, but MY favorite dessert is WHITE cake with Real FUDGE icing.

I was after CANDY this time, tho, so I beat it until it became quite thick. You have to be careful because it can get TOO thick and then it isn't creamy any longer.


This recipe makes a TINY bit of candy so if you are SERIOUS about making FUDGE, try another recipe or double this one.....

If I am making fudge BIG TIME, I use the recipe that was on the cans of HERSHEY'S COCOA years ago......

AND....

I STILL like to "lick" the beaters.......:o)



It's still too hot to cut and it is so full of pecans, I may not can cut it very straight....
....DOES ANYBODY CARE if it's cut straight??

.....Not around here, they don't !! All we can think about is getting a piece small enuf to fit in our mouth..straight or not!

Some people like pecans in their fudge....

we like fudge in our pecans !!

FUDGE ICING

~ double this recipe for a two layer cake or a sheet cake ~
1/2 cup each of BUTTER, MILK & COCO
2 CUPS SUGAR
A medium boil for 7-8 minutes
Add capful of Vanilla
Beat to desired consistency *

ADD PECANS
* Again, be very careful while beating as it goes from liquid to THICK in a heartbeat...

I would love to have more recipes for fudge....if you have a good one, would you send it to me? Then, I can have a FUDGE TASTING PARTY for my grandkids and they will THANK YOU profusley! ;>)

Oh my, that does look good! My name is Kathy and I'm a chocoholic. I dont have a fudge recipe (or didn't til now!) I havent made it since I was little. My hubby makes the worlds best brownies though:>)

I use a fudge recipe off the Kraft Marshmallow Cream jar. It is called Fantasy Fudge. I used it the first time I ever made fudge and continue to use it. It is fast, easy and you don't have to beat it. It does require a good amount of stirring. If you try it, let me know how you like it!

YUM! I love fudge & that looks SO wonderful with all those big pecans in it! For Christmas gifts a couple of years ago I made Rachel Ray's 5 minute fudge wreath - it's so quick & easy to make & super good!

Hi BJ,
Your fudge looks yummy!! I have a recipe for peanut butter fudge that I've made for years. My son requests it every Christmas. It is very simple to make and has one key (secret) ingredient!! Here's the recipe:

2 cups sugar
1 cup milk
1/2 stick butter
2 heaping tbsps. of white Karo syrup (secret ingredient)

Cook all this until it reaches a soft ball stage tested in cold water. Remove from heat and add 1 tsp. vanilla and 1/2 to 1 cup peanut butter. Your choice of how much peanut butter to add according to your taste. Pour into greased plate until firm then cut and enjoy!!

The Karo keeps candy at a nice consistency..firm but not too hard and it doesn't get sugary. This is a very tried and true recipe that is usually never-fail fudge! Even if you don't cook it long enough it's still good to eat with a spoon!! :O) My son use to beg me not to get it done so he could do just that!! LOL

I have made this using chocolate chips instead of peanut butter which is good too, but my family always preferred the peanut butter. Let me know if you try it and if you have any questions about it just ask!!

This is the recipe I use...never fails:

3 cups sugar
3/4 cup butter or margarine
2/3 cup evaporated milk
1/4 tsp salt
1 pkg (12 oz) chocolate chips
1 jar (7 oz) marshmallow creme
2 tsp vainilla
1 cup chopped pecans

Combine sugar, butter, milk in 3 quart glass mixing bowl. Microwave on high stirring every two minutes. In my microwave this takes about 10 minutes...I cook until soft ball stage. Then add choc chips and stir til melted. Add marshmallow creme and vanilla and mix well..add pecans. Pour into buttered 13 x 9 x2 baking dish.

So good!

Oh this looks yummy! I made fudge 2 yrs ago at Christmas, from the recipe on the marshmallow fluff jar. Makes a nice 9 x 13 pan of fudge, with plenty to share with others.

Bj, that looks so delicious! I love when a nice smell brings you a very nice memory of past days. I have that with a smell of roasted sugar almonds!!!
And what should I say about chocolate, I used to be a very bad chocoholic now I think I have improved little bit, but can't resist it... OK it must be somewhere here in my kitchen a peace of it.... where is it....who took it ... I need some chocolate!!!!!

Fudge...did you say FUDGE??? Oh my goodness, you've found my weak spot. I absolutely adore fudge and can eat a whole pan in one sitting if I let myself! lol I love fudge in my pecans too! hehe

I make a Peanut Butter Chocolate Fudge that is sooooo good and the smoothest fudge ever, I have to make it every time Steve comes to visit, he's crazy about it!

1 (12oz) pkg semi sweet chocolate chips
1 (12oz) pkg peanut butter chips
1 can Eagle Brand Condensed Milk
1 1/2 tsp. vanilla extract

Mix chips in double boiler with Eagle Brand. Stir, do not beat. Take from heat and add vanilla. Place in buttered 8x8 pan. Chill until set.

Ah BJ I am a confirmed Chocoholic! I will surely have to try this for frosting!
Remember once having some stomach problems and my doctor actually told me to not eat chocolate!!! I shook my head, she said you would eat it even knowing it is tearing your stomach up. My comment, if you are going to tell me I can't have chocolate, just go ahead and kill me now!!! Yeah , she thought I was crazy. We were even cause I thought she was for suggesting it, can you imagine no chocolate???

My goodness. I can almost taste that fudge. I can definitely smell it boiling. There is nothing quite like "hot" chocolate.
