HAVE A WONDERFUL SATURDAY ~

Breakfast is, by far, my favorite meal of the entire day....

A couple of times during the week, I really get hungry for homemade biscuits...and I LOVE those biscuit MIXES, too...those that you just drop from a spoon onto your baking sheet. They are so yummy.....sometimes, I make them with buttermilk (no buttermilk? Just plain milk with vinegar or lemon juice in it works beautifully). I was out of the mix this morning, tho, so had to do the scratch thing....not as light and fluffy as the mix, tho. I never have really had a good biscuit recipe! If you have one, would you share it with me?

I had to mix, roll and cut these...the whole 9 yards. Takes time but.......What's a girl to do.....I LOVE BISCUITS.



This is what we had with the biscuits....When I was a little girl, I LOVED it when my momma made mashed potatoes for dinner because she always made enough to have for breakfast the next morning. POTATO PATTIES are one of my favorite things in the world. When I make mashed potatoes, I ALWAYS make enough to have left-overs, just like my momma did.

You can make the patties with just plain mashed potatoes, milk, egg and a little flour. OR...you can add any or all of your favorite things like REAL bacon bits and cheddar cheese, like I did here. Green onions, hot peppers, mushrooms, ham bits....just about anything you might want to add tastes great.


Fry them in a healthy oil like olive oil, and drain them really well.....

Just a small amount of left-over mashed potatoes, after adding lots of goodies to them, makes a nice amount of patties. I nearly always have enough left to make some more either for dinner or breakfast the next day. AND...I love them cold, too, so I snack on them during the day......
We had warmed REAL Maple syrup with these this morning and I almost ate too much! Soooo good. Maybe if we eat healthy cereals, fruits, yogurts and other low fat foods mostly, this kind of breakfast won't do too much harm, every now and then.....????? Do ya think?

WOW! they look wonderful. I like to have breakfast for dinner. I found a on lind goodwill to shop it is shopgoodwill.com. I have bought 2 things already. It is like ebay but things are cheaper and there's not as many people bidding on the item. You should check it out.

Oh BJ...now you've really made me hungry this morning! lol Gosh, I remember my mom saving mashed potatoes to make those patties but I haven't had them in years. The next time I make mashed potatoes I will definitely be trying those. I love biscuits as well:-)

I've just checked out Ree's recipe for the apple dumplings...omigosh, they look wonderful! Love her sense of humour also! lol I've bookmarked her blog so that I can copy her recipes.

Those look so good. I've never had those potato patties before..I make biscuits, but I just use self-rising flour, shortening and milk. They turn out pretty light and fluffy though. My brother-in-law taught me how years ago.. Momma had shown me before but she was more into Whopp biscuits(out of a can)..lol

Wonderful breakfast ideas! I hae never had potato pancakes like that but they sure look good, especially with bacon bits and cheese! Yum!

Good Morning BJ,
You have done it to me again. LOL. Excuse me while I wipe the drool off of my keyboard here. LOL. Your homemade biscuits are just to die for. I have never heard of Potato Patties before. I will have to try that sometime when I have some leftover mashed potatoes left. Oh heck, I may just have to make some so I can make these patties. LOL. I don't have a recipe that I use when making homemade biscuits. I've never used the already made kind either. I've always just made them from scratch. I don't measure anything either. LOL. I just add till it looks like enough. I use self-rising flour and add an egg to the flower. I put in some butter and mix it together and add some buttermilk if I have it. If I don't, I just use regular milk. I mix it all together and then put it out on some flour and kneed it. I then flatten it out and I use a small cuop to cut my biscuits with. I put them on a pan that I have sprayed with PAM and then before I put them in the oven, I put lots of butter on top. LOL. Think I may be related to Paula Deen? LOL. They come out so good and don't last very long around here. Dang it BJ, I think I may make some homemade biscuits and some of those Potato Patties today. I can't wait now. LOL.
