One of our good friends shared this beautiful
yellow squash with us ...
what a pretty golden yellow...
but more important, what a generous share from a friend.

Of course, the way we like it BEST is sliced, dipped in cornmeal mixture and
FRIED...
oh BABY...
but since we aren't eating much FRIED ANYthing,

Mr. Sweet is going to grill some for us tonight.. then, I'll slice the rest
and freeze.
No, we won't eat it fried...but ROASTED is good, too..
....sliced, sprinkled with OLIVE OIL, a little light dose of SEA SALT and fresh ground PEPPER,
in the oven for about 20 minutes and you are GOOD TO GO. ♥

Just watched him anchor the last race. What a trooper and a very fast runner. There are so many wonderful stories about some of the athletes. Do you remember Jim McKay saying, "Up Close and Personal"? Those were good old days..Happy Weekend..Judy

ReplyDeleteLovely squash - and a wonderful gift from a true friend. I go with grilling, just coating with a bit of oil before. Salt and pepper, and the fresh squash is now set for dinner. Yellow like the sun and with a side dish of shadows. Nice!

Oh- That is how I like my squash, too. Floured and fried! Yum....However, I have been just dry sauteing it in a non-stick pan lately and we love it that way now. It browns up and I just salt and pepper it- xo Diana

ReplyDeleteOne of my favorite vegetables, so many ways to prepare it. I have a rice cooker/steamer that I use quite often to steam carrots, squash, zucchini, and onions together with a little red pepper flakes sprinkled on top... so good and healthy too. My daughter likes it boiled with a little butter added.

ReplyDeleteI had to search all over the place for yellow squash yesterday....it is hard to find here in my neck of the woods for some reason and I was so craving some roasted peppers and squash...finally found some at Publix....good to have sharing neighbors!!!
