CALLING ALL LEMON LOVERS....Lemon Sponge Puddin'....and I'm not kiddin' ...!!

 The other day, Mr. Sweet was at the "new" place, working on the utility closet...
I stayed home to do laundry and all that stuff and decided on a 
GRILLED CHEESE SANDWICH for lunch.


A lot of the time when we have grilled cheese, we have TOMATO SOUP with it, which I LUV.

I can, however, do without the soup if I don't have any in the pantry...


but NEVER can do without a great dill pickle to go along with that grilled cheese.
If I am out of dill pickles, forget the cheese sand.

My favorite kosher dills are CLAUSSEN Mini.
They are so lip-smackin' good, it's unbelievable.
They are in the cold section, along with the cheeses and luncheon meats....really good pickles.

While my sandwich was making,
I was also trying a new dessert recipe from  my friend, BONNIE.


THIS is her LEMON SPONGE PUDDING
and, since I am a SUCKER for anything lemon,
I mixed it up and had it in the oven in no time.

As you can see, she had these beautiful little ramekins to bake hers in
so I started looking for my little plain white ones.....
"I'll fill them up with goodness and place in a pan of boiling water and bake them up"
oops.... ramekins packed.....in a box at the SUMMER HOUSE.

ok, Bonnie said it could be baked in a larger bowl so.....
 

into my vintage corning ware bowl and into a pot of boiling water and
into the oven it all went.

O Noooo, it wasn't ANYwhere as pretty as Bonnie's in her
turquoise ramekin.

but, one must work with what one has....


OOO, it smells sooo good..

fresh lemon in the air is intoxicating
and this dish is no exception....

It bubbled and steamed and baked
in that oven and made the dish not too appealing.....but, oh boy....
was it ever GOOOOD.

I did find ONE little ramekin in the cabinet....
and look how pretty now.... :)



I just HAD to add a spoonful of LEMON CURD to the side...
and two fresh strawberries didn't hurt matters, either.





I followed BONNIE'S RECIPE 
to a tee except I did add my infamous teaspoon of VANILLA...
(and, as always, I dabbed a bit of vanilla behind each ear...just like my Aunt Lillian used to do..

I seriously urge you LEMON LOVERS to try this recipe...
not too many ingredients...
most right in your pantry and fridge.

It goes together fast....takes only 45 minutes to bake and,
served WARM with ice cream ......or LEMON CURD, *ahem....
or COLD with fresh, sweetened whipped cream, 
it's a light and very tasty dessert that you'll want to make time and time again.

  1. I wish I had known you when we lived in Lubbock!! We could have had a hooting good time. Thanks for giving that recipe a try. I just might dab on some lemon curd next time. How bad could that be. I've never tried vanilla in it (or behind my ears) but why not? You do know how to eat a grilled cheese sandwich. My house is never without dill pickcles!! Thanks for the mention.

    BJ, I just love how you *keep it real* & don't mind showing us a less than stellar photo. We ALL have stuff like that happening & it makes me feel better to know it happens to the best cooks, too.

    those pickles look inviting - will try to find them in the KaDeWe, they do have an American corner, so with a bit of luck...
    And the recipe I will look up - the photos are enticing!
    The vanilla behind the ears convinces me instantly - I love vanilla in all forms, so sensuous.

    And grilled cheese sandwich...yum.

    Speaking of pickles, have you tried the new Claussen Spicy Dill pickles? They're out of this world good. Just a hint of 'fire'...not all too overwhelming, and oh so good with a ham sandwich. LOL

    Seems I'm hungry...again!!!

  7. I love most puddings and Lemon Sponge Pudding sounds wonderful. I will have to give it a try. As for dabbing vanilla behind the ears, the scent of vanilla or chocolate on someone is intoxicating. I have used the real stuff... but generally use a vanilla body spray found at The Bath and Body shop. Don't care for perfumes... too harsh.

  10. ps...bj...I didn't post that I don't like chocolate...I like chocolate, it's the frosting I don't like on cake!! Just plain cake for me with not added icing.

  16. Why or why have I lost my urge to cook and bake. I don't understand it. I mean, I did a lot of cooking all my life and loved it, but one day, I became less and less interested in it. :(

  19. I must try this recipe! Love lemon anything. Must be grilled cheese weather. We had them for lunch yesterday with chicken noodle soup! So glad your home is getting closer to being sold. If it was closer to us, I would have loved to have purchased it just for the swing, shrubs, kitchen, etc.! God bless you all!

  24. Oooh, I do love lemon, as does Mister! What a delightful dessert.
    Vanilla is my "secret ingredient", too! I don't care for dill pickles, but I can pretend they are sweet gherkins. I've been thinking about your food photo tips. I should use them, there is a new peach pie and a peach crisp in the kitchen tonight...

  28. Would you believe my husband hates ANY sort of lemon dessert? I mean really, who hates lemon sweets?! So I rarely make them anymore. But this sounds like a wee bit of heaven to me. And the good news is, that's one less mouth to have to share with. :)

  30. I can almost smell that "pudding" baking. Yummy!

    On a more serious note, I told my husband that while I so rarely remember details about anything, I remember every moment of that fateful 9/11. Working in a church made it a very busy day for us as people were coming and going all day to pray and just to be with other people. It is hard to believe 12 years have passed.

  32. I am about to pin this to try. I am positive that my husband will rise up and call me blessed if I make it correctly. It looks so delicious.

    But before that, I will tell you that I loved your post from yesterday and feel exactly the same way you do. I rewatch it every year. We must never, ever forget. It breaks my heart how quickly so many have done just that
