I made her a Galette

Hi, friends.... Hope all is well in your world.
Things are very good around Sweet Nothings.

May 20th was daughter, STACY, and her JENT'S
24th wedding anniversary.

I wanted to take a homemade dessert....
but something a little different from a PIE or CAKE....
AND
something LIGHT and not full of nasty ole calories.

and, in one of my COUNTRY LIVING magazines, I found this

RUSTIC STRAWBERRY
GALETTE
              ******
HERE is the recipe.

(Now, I changed up the recipe a tad...
I used IDEAL sugar sub. instead of REAL sugar....
and I used NO FAT cream cheese.)

Galette is a term used in French cuisine to designate various types of flat, round or freeform crusty cakes..pies.

This is so pretty...I just HAD to make her one...and....

      I DID !!

This is the SWEETEST dough I have EVER worked with.

With COLD BUTTER chunks....as well as CREAM CHEESE chunks....
and NO FOOR PROCESSOR,
I was worried that I would have a hard time getting it all mixed....

Not to worry....
my heavy duty hand mixer, a fork and, at one point, clean, scrubbed hands,
it all went together beautifully.

Into fridge for an hour or so...
tightly wrapped in plastic wrap.

Altho I had all ingredients for the luscious PASTRY,
I did NOT have 2 lbs of FRESH STRAWBERRIES. on hand.

Sooo, after washing up all the tools and dishes used.....

I fixed myself a light breakfast..

Mr. Sweet wasn't at home to join me.

and off to the store to buy STRAWBERRIES.

O yes....we DO use PAPER PLATES...and RED SOLO CUPS....:>)

The strawberries are LARGE...and so sweet ...

and, at least for right now, they are very low in cost.

After the pastry had chilled,
I rolled it to a 12" circle, 1/4" thick,
between sheets of parchment paper.
Now, isn't this just beautiful !!!!!

I was afraid of
MUTATION
in the oven....

I've put things into that hot oven looking mighty FINE...
THEN...

when I take it out, it looks like a totally
different THING.

But, this time, it turned out just NEARLY as pretty as the magazine photo....

Well, I think I added THIS photo twice......o, well

and my sweet daughter LOVED IT....!!
Makes me happy to do something for her that she wasn't expecting.

This wasn't HARD to make...just took a little time, letting the pastry chill a couple of times.

Served with sweet whipped cream, it's a really GOOD dessert and very impressive.

I was so afraid I'd burn my crust, I had to put it back into the oven for a few more minutes.
It came out beautifully.
**
I have another 2 lbs of fresh strawberries and I just saw an awesome recipe for a
FRESH STRAWBERRY PIE

Playing in these parties...and havin' fun.

  15. I'm all about the strawberries these days since the strawberry farm right down the road still has them for the picking. It probably won't be long before they're gone. This looks delish to me. I liked the fact that you used the lower fat/sugar options.

  19. Happy Pink Saturday, dear BJ. Thank you for the birthday wishes. Hunks are always a good thing. Thank you for always making Pink Saturday special.

I make a galette almost every weekend. I fill mine with whatever fruit I have - berries, apples, peaches. Our favorite is mixed blackberries and peaches. Sugar free sweetener forces, too.
