Hello, Bloggers and Lurkers and all our other Friends...
After all the RICH foods of the Season,
Mr. Sweet and I crave a pot of VEGGIE SOUP and CORNBREAD......
THIS veggie soup was made with just what was in the pantry and fridge....
I was NOT in the mood to hit the grocery store AGAIN this week.
Our cornbread here at Sweet Nothings is SOUTHERN cornbread...NO SUGAR....Now, Mr. Sweet sure would rather have it WITHOUT sugar....
I can go both ways.
While I like sweet cornbread, too, I really prefer NO SUGAR. If anyone is interested, the recipe is under my header marked RECIPES ...(DUH) :))
Altho we much prefer FRESH VEGGIES, I had NONE...NADA...NOT EVEN ONE.
Sooo....
Canned and frozen veggies...
here we have English Peas and Corn,
Sooo....
Canned and frozen veggies...
here we have English Peas and Corn,
a small baked potato cut up and added...
BEEF BROTH...never water..well, water with a bullion cube works...:)
onions, a few pieces of ANAHEIM pepper, celery, including the flavorful GREEN leaves,
all sauteed until tender...
then added to the pot.
A shake or two of a steak sauce..
then the best part....FIRE ROASTED TOMATOES..
I love to cook with these and keep several cans in my pantry.
Salt and pepper to taste and let simmer awhile before eating.
and, may I say here that the soup will be even better the next day,
so make a nice, big pot.
My desk top bit the dirt 2 days ago and all my birthday photos are on it....NOT on my laptop, tho. When things get FIXED, I'll tell you about my wonderful 75th birthday party.....:))

It must be a trend! We have chicken corn chowder on our menu tonight - just as we did last night! We hit up Sam's for all things paper - toilet paper, paper towels and tissue - plus milk and meds. I just can't handle any more grocery shopping - nor can my budget!!
ReplyDeleteWe will be patiently waiting for those birthday pics!
Sounds delicious! We just had 15 bean soup with some ham that was left over. We also had skillet cornbread with NO sugar. :)
ReplyDeleteTomorrow I'm making stew. I'm with you...no stores!
Soup is the perfect meal for this time of year. LOVE that cornbread pan.
ReplyDeleteWe really need some soup around here...it looks hearty and delicious and a nice way to use up leftovers. I love the skillet you use for your cornbread.
ReplyDeleteI hope your new year has started out well. I'm looking forward to some birthday pics!
XO,
Jane

ReplyDeleteCornbread...that's the only way to go with soup! Now, that's some good eatin'...
ReplyDeleteHappy 2013!
Warmest Regards,
Loretta & Miss Kitty
I will take my cornbread without the sugar with a big glass of sweet milk. Sometimes that is all I have a night. I crumble the bread into my milk. O'so good!
ReplyDeleteI sure do miss my husbands homemade soup and his cornbread. He was a good cook. Your soup and cornbread looks so good. have a blessed day. Madeline
ReplyDeleteI love homemade veggie soup and the cornbread sure looks good, too. My hubby doesn't like sugar added either, but I do so I usually sneak a little in. Happy Birthday that I missed!!

Your soup and cornbread look soooo good! I like unsweetened the best, but can go either way. I made posole today, a soup of sorts that is popular here in New Mexico. Have a blessed and happy New Year...hugs, Penny

ReplyDeleteHi bj, We love a good pot of veggie soup. Your soup sounds and looks like great soup. We like sweet cornbread and we call it Johnny cake where I come from. Yep, we are damn Yankees who grew up in the South. Yikes.
ReplyDeleteI'm sorry about your computer. That is a nightmare to me.I hope all is fixed soon. I have wanted to post about our trip but I haven't found the time with the holiday celebrations since we arrived home. I'm waiting for calm and quiet.
I know you had a great 75th birthday celebration with your darling family. Congratulations.
We are watching our Gators get beat. Sad!!!
Love,
Jeanne
I'm avoiding the grocery store too this week. Soup sounds like the perfect meal after all the holiday indulgences!

Happy Belated birthday! You are such an inspiration to me. I would love to have your spunk, energy, and LOOKS when I am 75.
ReplyDeleteI'm with ya in needing something healthy like veggie soup. Enough of the foods I'm not supposed to eat. I feel yukky!
Hey there BJ.
ReplyDeleteWe have been trying to cut back on all the rich foods as well. This week is more using up the frozen leftovers for me.
God bless.
LOVE your opening line of: "Hello, Bloggers and Lurkers and all our other Friends..." Oh wow do I love it! I may just have to *grab* it! -giggggles-
ReplyDeleteI try not to let those over-and-over-and-over-again-lurkers "bug" me, but.... -Hehhhhhhhh- Use that line and let 'em know, I AM keeping an eye on them! In my Stats Place. -hehhhh-
Ahhh yes, the time of year for swearing off all the excess of Holiday Goodies! :-)
ReplyDeleteFor those who ate 'em, that is.
Around here, I don't. And I don't let him do much of it either. -gigggles-
But who among us, could not try for healthier eating? No one. We all need healthier eating and less of the amounts, and etc.
Hey, this is the first such post (which I remember anyway) on this usual Jan. Theme. *REFORM!!!* -giggggles-
Oh sorry about the computer. Don't we have a love/hate relationship with them? You have made me so hungry. I think I will copy you. We are between pay checks so no goin to the store for me. I have all I need right here for soup and corn bread. I love your recipe no fire roasted tomatoes but have some with green chili's. Yummy. Thanks for sharing and giving me inspiration for lunch! Oh we like salty too!
ReplyDeleteHave a great day.
Oh yes, we had soup two nights ago and leftovers last nigh:) Yummy on a cold night or ANY night! Enjoy your day my friend, BIG HUGS!

Your veggie soup looks so good and I bought a can of fire roasted tomatoes today for our next pot of soup. I cooked red beans with the ham hock and cornbread. Tasty and get several meals out of one pot of beans.
