IOWA CORNBREAD...

HI, YA'LL
Remember the IOWA  CORNBREAD recipe on my SUSAN BRANCH calendar?
IOWA CORNBREAD with BEE BUTTER...?
Well, I made it tonight for dinner and it was VERY good.
I followed the recipe, word for word
BUT...
when it came time to "pour it in the pan", I just couldn't bring my silly self
to use just ANY pan...it says use an 8x8 square pan.
I have always cooked my cornbread AND biscuits in CAST IRON....
soooo...
I used my little CAST IRON CORNBREAD SKILLET
and I am GLAD I did.
This recipe calls for ingredients I had never heard of putting into cornbread batter...
wings of a bat... zest of an orange
ginger
cinnamon....yep....CINNAMON.
If you decide to make this delectable bread, BE SURE and don't skimp on these spices...
they are what makes the bread sooo good and so different.




It called for 1 1/2 cups of flour
and only 3/4 cup of CORNMEAL.....
whaaaat??

This is where I got one of the clues this cornbread wasn't our WEST TEXAS CORNBREAD....

As you will see in the photos, more of a biscuit texture....
OOO, the aroma of those spices, baking.....
almost overwhelming. 
I kept opening the oven door to take little peeks and have that
wonderful fragrance hit me right smack in the face. ummmmm
I thought, "these are going to be more like a BISCUIT"
and yet, not  QUITE a biscuit as we know it.
And, I was right....a biscuit....a VERY GOOD BISCUIT.
Oh, the cornmeal made a more dense bread...
it was just a bit different from anything we had ever had...
and we loved it....
all the spices in the batter made our home smell like a 
WONDERFUL BAKERY.
....just heavenly
 I served this delightfully different cornbread with my homemade
BEEF HASH...
my mother's best dish.
I grew up with it and it is one of my very favorite COMFORT foods.

Rump roast, cooked until tender..
potatoes in the skin (I micro mine until almost done...then cut in cubes.)
onions
celery
green pepper
salt and pepper
(saute these until tender)
juice from the roast
a little water
a little flour for gravy....
let all simmer until flavors marry.
O  HONEY
And, then of course, came the BEE BUTTER...
honey and butter mixed....how could it NOT be heavenly.

I spread the Bee Butter on my Iowa cornbread, while it was warm
and it was DELICIOUS.
(isn't the little VINTAGE, SPREAD JOY spreader just perfect ! )
Kathy made it for me.
THIS cornbread is entirely different from OUR cornbread....
but it is a delightful change of pace bread that I will make again.
...wish you could come by and have a piece with me....
well, maybe another time. ;-)

  3. I know I would love it! I love bread better than dessert! Love your skillet for cooking them. I use cast iron for my cornbread, too and make it thin so it's crispy! Yummy!

  9. That sounds wonderful BJ. Doesn't sound like our Texas style cornbread at all. Is it kind of like a scone? Well I bet it smelled and tasted yummo!

    Now...I just have to tell you that you and your hubby looks so darling in your 52nd anniversary photo. You are sooooo attractive and beautiful and just a sassy looking gal! BEAUTIFUL! Your hubby must think you are something else! LOVE IT!

  12. Everything looks so delicious. I never heard of cinnamon in cornbread but that recipe really sounds and looks good. So did the hash. It's about midnight here, and suddenly I have a craving for that delicious corn bread and some hash.

    The page from your S.B. calendar... I think it's from her Autumn book. Which is now waiting for me, at the library.

    I have a bitter-sweet relationship with S.B's work. :-))))))) Of course it's a SWEET one, because her work is sooooooooo beeeeutiful. The bitter part comes from my so wanting, wanting, wanting to do water colors, when I look at her work.

    I can do a wee bit. But naturally, nothing like hers. -sigh, moan, pout, etc.-

    So.... Bitter-sweet. :-) But that doesn't keep me from looking at her books! ,-)

  17. I love using cast iron bj. Southern cooking just screams for it. I love your divided pan, pretty slices. This is a different recipe, sounds really good too. The Bee Butter, I've got to have some of it! Great photos……….

  19. Hi bj ... you always make me so hungry with your great cooking. Have not made hash in years. Need to try your method ... the cornbread looks good too. Need to make that, but need that neat little cornbread cast iron pan .... well maybe, I will just have to use my round one.

  28. Your dinner sure sounds good! I love your biscuit pan, I don't have one of those! The biscuits sound wonderful! I hope you used those cute measuring spoons I sent you to measure the ingredients. I use mine all the time! :)

  29. OH MY! LOVE this recipe!!! and since I'm in New England cornbread is not really OUR Specialty! LOVE seeing what the rest of the country has to offer us... I AM going to go buy one of your biscut skillets SPECIAL to make these. AND when I print it out it will be "BJ's Cornbread skillet biscuits"!!!
    NOW, I have to ask if you made any adjustments on the temp and timing for the CAST IRON???

  30. spiced up cornbread...blows my skirt up...and just go ahead and slather on a double helping of honeybutter...I love the cast iron pan,that makes things easier,huh!

  32. Now this is my idea of a wonderful meal! I just don't know how you eat like this and stay so slim. I'm finding it harder to eat anything good and not gain weight! I love the way this recipe sounds. Illinois cornbread isn't like this either!

  36. Well, I'd have to give it a try and not tell them what it is! My husband is such a picky, southern eater - things just have to taste like he's used to!
