ODE to THE LEMON

PLEASE...
Come on in.....
I'd like you to have a seat at my table and share
LEMON   PIE
with me.
YES....
I know, better than anyone, that we are ON A DIET here at SWEET NOTHINGS.
but...I promise not to serve YOU anything SUGAR FREE....
NO SIREE BOB....
The recipe for my Lemon pie is written in an OLDEN and very USED cookbook...
If I am remembering right, it actually came out of SOUTHERN LIVING.
3 eggs, separated (yolks for pie....whites for meringue )
1 can EAGLE BRAND CONDENSED MILK
1/2 cup LEMON JUICE
1 teaspoon grated LEMON RIND
1/4 teaspoon CREME OF TARTER
1/3 cup SUGAR
1 Graham Cracker Crust.
MIX first 4 ingredients well, pour into graham cracker crust.
Beat the egg WHITES with the sugar and creme of tarter.
Spread on top of pie, bake for 15 minutes in a 350 oven.
Let cool and refrigerate for a couple hours before serving.
♥ ♥ ♥
THIS is the pie that I would serve YOU if you are ever in my neighborhood.
and I'd serve it with YOUR choice of....
Hot Tea
Hot Coffee
Icy Cold Milk...
or all of the above.
When life gives you lemons, ask for the salt and tequila.
When life gives you lemons, suck out all the VITAMIN C
and yell, "take THAT, life."

When life gives you lemons, take them all and sell 'em on Ebay.
(gotta love THAT one)
      BUT  THE BEST OF ALL....
MAKE  LEMON  PIE
...even if it's
SUGAR FREE.
I didn't have any
Sugar Free*Fat Free
LEMON Jello Pudding
but I DID have this
WHITE CHOCOLATE.
I just added lemon juice to this  and
filled little tiny graham cracker crusts
and Mr. Sweet and I enjoyed our
LEMON PIE.

A dollop of sugar free Cool Whip...
.....sprinkled with a little bit of LEMON ZEST
and, O HONEY.....we were in LEMON HEAVEN.

OOO, and I forgot to say that I added a
teaspoon of Vanilla....

♫♪♪...a teaspoon of Vanilla makes the medicine go down...
NO, wait....
THAT'S SUGAR, isn't it. ?
:)

So, WHEN you come see me and you want
Lemon Pie,

I will make one......JUST FOR YOU.

AND, if you decide you'd rather have MY little fat-free treat...
I'll make ya one of those, too, 'cause, ya'll,
these are just flat DELICIOUS.
XOXO bj
