SPUDS

I don't know about ya'll but I happen to love a POTATO....
 ANY way it's fixed.
Now, folks..........
THIS was a POTATO SALAD to write home about.
Sweet and tart chunks of apple, mixed in with potatoes and all the goodies,
drizzled with a  P0PPYSEED DRESSING.
(I gotta go back to that post and get that recipe....I'm hungry for it now. )
DUE TO MANY EMAILS ABOUT THE POTATO SALAD,
May I just say....
oh honey !
**
I always leave the potato skin on any time that I can..
Cubed potatoes and boiled until tender but not falling apart..
while they cool...
chop fresh onion (I used the sweet VADAHLIAS)
a tiny bit of sweet pickle relish
chopped FUJI apples, with the skin left on....(I feel safe in saying this wouldn't be nearly as good with ANY OTHER APPLE !!)
In fact, I take NO RESPONSIBILITY for the goodness of this luscious
POTATO SALAD using ANY other apple other than FUJI...WITH THE TENDER SKIN ON..
Salt and pepper to taste...
a large spoon of REAL MAYO .. or enough to make your salad the consistency you like..
About A HALF CUP of the
GIRARD'S APPLE POPPYSEED DRESSING
AND, ohmygosh...
POTATO  CHIPS.
It really IS true that YOU CAN'T EAT JUST ONE....
No sir.....when I get started, I could just eat the whole entire sack !
and, if I am about to eat a sandwich, get it all made....on the plate.....ready to eat....
and I find there's NO POTATO CHIPS around....
well.......I just wrap that sandwich in Cling Wrap and run to the corner Dollar General
and get myself a bag of  POTATO CHIPS.
My really good bloggy friend, RITA that runs SAGE CUISINE blog
posted a new way to bake potatoes.

BAKED HALF POTATOES
I'm telling you......WE LOVED THEM.
This photo took on a really yellow tint but I decided to leave it 'cause it sure makes
these potatoes look GOOOOOD.

HERE is her recipe.

NOW, I may have gotten heavy-handed when I added my butter....so the next time, I will
try to contain myself and not add so much.
Like PAULA DEEN, I do love the buttah........
I also added a tad more cheese, SHARP CHEDDAR....the cheddar cheese, mixed with the melting butter creates the most wonderful, little CRUNCH around the edges of the potato...
I cooked mine in the microwave for about 15 minutes....
ummmmm, so good.
You can put your spin on them....they would also be delicious with chopped green onions on top.
I have to be truthful and tell you that I made these potatoes for dinner, with
a steak and salad.
We enjoyed them so much, I made them again the next day, with a green salad,
for our lunch...(a little less butter.....:)
They are quick, easy and so tasty.
YOU'RE gonna love them, too.
When you go over to RITA'S for the recipe, would you kindly tell her bj said HEY ?
XOXO
i am joining in the fun at
Thanks to all the hosts of these fun parties...
and thank YOU for coming by to see me today.
