I start with chopped
onions
celery
green peppers...I used ANAHEIM as we like these much more than a bell pepper.
Saute these in a light olive oil until tender.
While the veggies are cooking,
add your choice of noodles to hot water and cook until tender.
I like using the YOLKLESS EGG NOODLES.
After the veggies are tender,
add 1 lb. of LEAN ground beef.
I HATE big lumps of meat when I am scrambling hamburger meat,
so, using a REDNECK way to cut this meat apart, I use my PASTRY BLENDER....
works like a charm !
Blend in spices that YOU like..
I use seasoned salt..
garlic..
salt/pepper
cooking sherry
a little soy sauce..
just what looks good to me at the time.
I always add tomatoes...
either canned..fresh...or even tomato soup.
If my meat seems too dry at this point,
I often add beef broth.

Once the meat mixture is done, add to the cooked noodles.
We are cutting down on the use of CHEESE...
so, most of the time, I just sprinkle fresh Parmesan on the individual serving.

a fresh GARDEN SALAD with a KILLER dressing
...and maybe a wonderful glass of good wine,

Looks wonderful. I don't know that I have ever heard of an Anaheim green pepper...will have to be more aware. Good idea about the parmesan and the cutting back on cheese. We must do better to cut back on cheese, too, and we both love the stuff. Who doesn't?

ReplyDeleteI'm such a casserole freak. I blame my love of them for some of the excess pounds I pack on. (Because it just seems so unfair to blame it ALL on ice cream, you know..) Yours looks delicious to me, and I liked the tip about the pastry knife.

AWESOME!! I am actually making something similar for tonight's menu. We have a music jam session and I always serve dinner to the musicians who come over to play....and the ones who come to listen! I have some vegetarian noodles I bought at an Asian market and some homemade spaghetti sauce I found in the freezer. I will follow your lead and saute up some extra veggies to add to the sauce and use some of the feta cheese I have left. No bread but a good salad and at least a glass of good wine should finish it up!

MMMM, YUM!!!! Looks delish! Love your table setting too! Whenever I make something that has ground beef in it, I cook the beef FIRST, then drain it in a colonder over a pie plate to remove the grease! Just a little tip, from me to you:):):) XO
