PICO DE GALLO
OOO......and for dessert....

My daughter made this one and may I just say.....

MARGARITA CAKE
1 BOX LEMON CAKE MIX
1 (3/4 oz) Instant Vanilla Pudding Mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup lime juice
1/4 cup tequila
2 Tbs. triple sec liqueur
GLAZE
1 CUP Powdered Sugar
1 TBS. tequila
2 TBS. triple sec liqueur
2 TBS. lime juice

350 oven
Grease 10 inch Bundt pan
Mix all cake ingredients together and beat for about 2 minutes.
Pour into pan and bake about 35 minutes, depending on your oven.
Just check it and if a toothpick comes out clean,
that baby is ready to take out of the oven.

Mix the GLAZE ingredients together until smooth..
Pour over cake when cake has cooled.
This is a really good cake but be sure not to cook it too long or it will be dry.
Stacy poked holes in the cake with a fork before adding her glaze and it was
DELICIOUS.

ReplyDeleteWe've had a terrible stormy day.....spent part of it in the basement while sirens were going off. We got lucky and didn't have any tornados on the ground, but sadly a nearby town did...fortunately, no one was seriously hurt.
