AGAIN....STEPS TO MAKING BISCUITS

Several emails asking about my biscuits
prompted me to show what my
dough looks like...
the texture, mainly.
It is VERY soft...
sticky...
If it seems the least bit DRY...add a little more milk...
just dust it with a little flour,
dust your hands, rolling pin and biscuit cutter
with a little flour.
(a clean can  makes the BEST biscuit cutter in the world)
Your dough should be hard to handle without flouring your hands
because it should be very soft.
2 cups flour
1 1/2 tsp. salt
2 Tbls. baking powder
3/4 cup buttermilk  (I always add at least 1 cup)
1/3 cup shortening
**
Roll as thick or as thin as you like..
450 oven for about 20 minutes..
always check as ovens vary
YUM # 1

It doesn't hurt a single, solitary thing if you grill some ham slices
while biscuits are baking....

Cooking in a cast iron skillet makes the bottom of the biscuits crispy and delicious.

Don't forget your wonderful jams or jellies..
In my case, it is the freshly cooked
APRICOT PERSERVES

 THIS is why it was so cheep cheap...
what to do with a big chip out of a cute plate ?
Why, cover it with biscuits, OF COURSE !
OR...
Go to your drawer of colored pens,
and do a little
doo-wa-diddy
to the boo-boo.... 

and then ENJOY YOUR CUTE, HANDPAINTED PLATE !!

  8. Being a West Virginia girl, I grew up watching my Mom, aunts and Grandmom make homemade biscuits. And, I am proud that I can make good ones too. I think that one of the secrets to making them is to keep the dough moist as you said.

    Nothing better than fresh homemade biscuits from the oven with yummy perserves.

  9. I absolutely LOVE homemade biscuits and I think the key is not to over work the dough! Well, that and buttermilk! You've made me hungry now! I would rather have biscuits than dessert! ♥♥♥

  16. I have been craving biscuits. Thanks for the tip about baking them in a cast iron pan. This never occurred to me, but I'm going to try it next time. Love those crispy bottoms! ;-)

  27. You are the smart one this week coming up with these perfect crumpets and now biscuits. Over the years, I practice making these and they never came out like yours(mine were not sticky)I think that was my problem. Your recipe is being kept for my next attempt at making biscuits.   30. "LOVE BISCUITS"!!! You have made me HAVE to run to the kitchen and "Whip some up for super"!!! YUMMMMMY! Oh Yes! My Mom always used her glasses to cut the biscuits too. She now makes drop ones BUT I like the cut ones best! AAAH and I would LOVE a ham steak with mine Thank you very much!

  31. Okay...I have to confess, I tried making your biscuits before (cause Bobby G. just loves biscuits and I can't make them worth a toot) but they didn't turn out too well. But reading this I am going to try again. Bound and determined to learn how. xoxo I love to serve biscuits (Pillsbury ones) with our Frog Jam...yummo...and real butter...double yummo!

    I have tried biscuits so many many times,, unfortunately whenever I saw I'm gonna bake a few in my family quickly call the local skeet shooting club and reserve a spot as they'll be bringing their own version of the clay discs -otherwise knows as MY BISCUITS~!

    You just made one of my favorite plates, with that ham, hot biscuit and Apricot preserves...my goodness that looks so good. And there you have those precious little chicken plates. I could really use a couple of yards of one of those lovely French Fabrics, that sure would look good in my house. Thank you so much for bringing these wonderful goodies to Full Plate Thursday for us to enjoy. I will look forward to seeing you next week!
