THIS BEAUTY is called a PINK FLUFF BALL...and IT IS NOT MINE....BUT....I WANT ONE..LOOKS DELICIOUS! and.......IT'S PINK !!

RECIPE FOR PINK FLUFF BALL
Coconut Snowball Cakes
3/4 cups (1 1/2 sticks) unsalted butter, softened

1 1/2 cups granulated sugar

3 large eggs at room temp.

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 cup buttermilk at room temp.

1 1/2 teaspoons vanilla extract

1 1/2 cups flaked coconut

Cream Cheese Frosting
1/2 cup unsalted butter, softened

12 ounces cream cheese, softened

1 teaspoon vanilla extract

2 cups confectioner's sugar

2 1/2 cups flaked coconut and Pink food coloring


1. Preheat oven to 350 degrees. Grease 10 of the cups in two extra large muffin tins.
2. Beat the butter and sugar with an electric mixer for 5 minutes at medium speed until light & flufffy. Beat in eggs, one at a time. Scrape the bowl & beaters and beat well to incorporate.
3. Sift the flour with the baking powder and baking soda. Add a quarter of the flour mixture to the butter-egg mixture, then add the vanilla and a third of the buttermilk. Repeat, beginning and ending with the flour mixture and scraping well after each addition. Fold in flaked coconut.
4. Fill the muffin cups 3/4 full and bake at 350 for 18-20 minutes, or until a toothpick inserted in center comes out clean. Cool in tins on racks for 5 minutes. Then, turn out onto racks to cool completely.
5. For the frosting, combine the butter, cream cheese, vanilla, and sugar in a large bowl and beat well with an electric mixer until smooth & spreadable. Add a drop of pink food coloring and blend well. (gel food coloring works best)
6. Once the cupcakes are cool, freeze them on a parchment or wax-paper-lined tray for 20 minutes. This will make them easier to frost. When you're ready to frost, spread a thick even layer of frosting all over the cupcakes. Sprinkle generously with coconut.Then, freeze them again for 30 minutes.
7. I stored mine in the refrigerator. Enjoy!...FROM ANDREA

    Okay...I absolutely agree with you about those little peas just being the cutest things ever!!! I love the "Hear no evil, See no evil, Speak no evil" peas in a pod!!! They're darling!!! Mmmmm...that pink fluff sure does look good!!!

  45. Thanks for stopping by and visiting today! The biggest thing that's keeping me from visiting right now is that my computer broke big time and I was procrastinating on ordering a new one. In the meantime, I am using a very old gateway and everyone's site take's forever to load. so it is painful to wait so long. LOL.
