Hold on, I'll ladle you up a bowl of homemade soup, cut a slice of cornbread and have it right over to you, table set or not !!

I don't know 'bout ya'll but out here in WEST TEXAS, we just can't eat SOUP without.....
CORNBREAD...
NOW....it's gotta be cooked in the ye ole IRON SKILLET or it's not REALLY considered CORNBREAD....
While Mr. SweetNothings and I prefer our CORNBREAD without SUGAR.....
Sugar can be good, too!!

1 cup CORNMEAL (we like white cornmeal)
1 cup FLOUR
1 EGG
1 teaspoon SALT
1 teaspoon BAKING POWDER
a little melted shortening or butter
BUTTERMILK to make a nice pouring consistency...

pour into hot skillet, with a little hot grease, and bake about 30 mins. in a 450 oven.
NOW....keep in mind that
JIFFY CORBREAD MIX
is mighty....I say, MGHTY good, too!!!

MY PERSONAL FAVORITE SOUP IN THE WHOLE ENTIRE WORLD...ANYWHERE !!*******
HOMEMADE POTATO SOUP
Peel as many potatoes AND onions as you think you might need for a nice-sized pot of soup
Cut into cubes and boil, with a little salt in the water, until potatoes are tender....
Drain off a little water and add MILK and BUTTER...
Cook for awhile longer until all the ingredients are married....about 30 more minutes should do it.
Now, you may add anything like carrots, celery......we like ours just as above with chopped GREEN ONION, SHREDDED CHEESE and BITS OF BACON sprinkled on top of our bowl of soup.....
NOTHING HARD ABOUT THIS RECIPE AT ALL AND IT IS VERY VERSATILE, being able to add anything that sounds good to YOU....
I ALWAYS make enuf to have the next day or two...it seems to get better as it sits in the fridge...

ummmmmm...and SOMETIMES, we love having FRIED (i know...bad) CORN FRITTERS
with our soups....

a can of corn (or leftovers, if you have some)
mix enuf flour, 1 egg, salt and pepper, a little melted butter, chopped green chilies,
chopped onion, grated cheese and milk to make the ingredients "stiff" enuf to spoon into hot grease in a skillet....cook until brown on both sides...
AGAIN...this is one of those recipes that you can add absolutely ANYTHING, chopped ham, bacon....
ANYTHING that sounds good to ya...(i love recipes like that!)

COURSE....WE GOTTA HAVE A DESSERT !! my mom used to tell us that dessert was invented by the French and that just a little bit of sugar, at the end of a big meal, helped the digestive system get to work sooner !!!
now...i am pretty sure she just made that up...she was good at doing that!! ;O)
ANYWAY...we believed her, i guess, because, to this day,
I WANT DESSERT !!
while we love HOMEMADE pies the bestest... i keep prepared graham cracker crusts and INSTANT JELLO PUDDING MIX in my pantry for times when i am pressed for time....Around here, we LOVE the SUGAR FREE CHOCOLATE PUDDING/PIE MIX,
poured into a tasty crust .....
while whipped creme or COOL WHIP is mighty good and QUICK,we REALLY like the meringue on the top of our pies. It doesn't take long to whip the egg whites, sugar to taste, and a tiny bit of CREME OF TARTER.....
